Healthy Greek Yogurt Biscuits

These Healthy Greek Yogurt biscuits only require 6 simple, clean ingredients and take 10 minutes to prep! They give you that same buttery, fluffy texture we all love in traditional buttermilk biscuits, except with way less fat & calories. And they taste even better! Ingredients

  • 1 1/2 cups organic all purpose flour
  • 2 tbsp monk fruit or sweetener of choice
  • 1/2 tbsp baking powder
  • 1/4 tsp salt
  • 3/4 cup plain, organic nonfat Greek yogurt
  • 2 tbsp grass fed butter

How To Make Them

  1. Preheat your oven to 375°F. Line a large baking sheet with parchment paper.
  2. In a large mixing bowl, combine the dry ingredients. Add in the Greek yogurt and grate in the cold butter (make sure it is super cold!!). Mix together until fully incorporated (It’s easiest to use your hands. Keep kneading, it will all come together I promise!)
  3. Roll the dough out onto a flat surface. Fold the dough over itself multiple times and then roll it out to have those flaky layers. Use a biscuit cutter or a lid of a jar to make 6 biscuits.
  4. Place on baking sheet and bake for 15 minutes, or until golden brown. Brush the tops with some melted butter before baking for a more golden top.
  5. Serve with jam, gravy, honey, etc.!

How To Store Leftovers

You can store your leftovers in an air tight container or in a bag on the counter for up to 3 days or in the fridge for up to 1 week. You can also freeze these well wrapped for up to 6 months.
