Ingredients

  • 1 1/2 cups organic all purpose flour
  • 1/2 tbsp baking powder
  • 1/4 tsp salt
  • 3/4 cup plain, organic nonfat Greek yogurt
  • 2 tbsp grass fed butter, cold

Optional: 2 tbsp monk fruit or sweetener of choice if you want them to be a little sweet 🙂

How To Make Them

  1. Preheat the oven to 375°F. Line a large baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the flour, monk fruit (optional), salt, and baking powder.
  3. Add the Greek yogurt. Grate the cold butter directly into the bowl. Mix until a shaggy dough forms with a fork or pastry cutter.
  4. Transfer the dough to a lightly floured surface. Gently knead a few times, then roll out. Fold the dough over itself 3–4 times to create layers, then roll to about 1-inch thickness.
  5. Use a biscuit cutter to cut out biscuits. Re-roll the remaining scraps of dough once to cut the remaining biscuits. Place on the prepared baking sheet.
  6. Bake for 15 minutes, or until golden brown. Brush the tops with melted butter before baking for a deeper golden color.

How To Store Leftovers

You can store your leftovers in an air tight container or in a bag on the counter for up to 3 days or in the fridge for up to 1 week. You can also freeze these well wrapped for up to 6 months.
