These Lemon Scones are super soft, weight watcher friendly, and only 110 calories each with no added sugar. They are also super quick & easy to make! I made these with Greek yogurt to keep the calories low and make the scones moist! I love scones because they are so light and aren’t too sweet!

Ingredients

  • Flour – 1 1/2 cups of flour, either all purpose or oat flour.
  • Lemon Zest – I used the zest of 2 large lemons. This is key to getting the lemon flavor in your scones!
  • Lemon Juice – 3 tablespoons of fresh lemon juice.
  • Butter– 2 tablespoons of cold butter, cubed.
  • Greek Yogurt – I used 1/2 cup of plain, nonfat Greek yogurt. This makes the scones so soft!
  • Liquid Sweetener – Use your favorite liquid sweetener! I used a sugar free breakfast syrup because it’s only 5 calories per tablespoon, but you could also use something such as honey. You will need 3 tablespoons.
  • Almond Milk – 1 tablespoon of unsweetened vanilla almond milk.
  • Baking Powder– 1 1/2 teaspoons.
  • Salt – 1/4 teaspoon.
  • Vanilla Extract – I used 1 teaspoon.
  • Glaze – This is optional, but I made a low calorie glaze by combining some lemon juice and confectioner’s Swerve until I got my desired consistency!

The Key To Baking The Perfect Scones

Here are my tips for baking the perfect scones:

  1. Keep the ingredients super cold! This contributes to getting those scone flakes.
  2. Don’t skip using the biscuit method. In the biscuit method, butter is cut into the flour mixture and then the liquids are added. While baking in the oven, the butter melts, the water in the butter produces steam, and as a result the product rises into flaky layers. I know cutting the butter in is kind of a slow process but trust me, it’s worth it!

How To Make Them

  1. Preheat your oven to 425°F. Line a large baking sheet with parchment paper or a silicone baking mat.
  2. In a medium bowl, whisk together the flour, baking powder, salt, and lemon zest. Cut in the butter with a pastry cutter or large fork until the mixture resembles fine crumbs.
  3. Add in the Greek yogurt, sugar free syrup, lemon juice, and vanilla extract. Mix thoroughly until there are no more lumps.
  4. Shape the dough with your hands into a 3/4 inch tall circle on your baking sheet. Brush the top with the 1 tbsp of almond milk.
  5. Slice the dough circle into 8 evenly sized triangular pieces. Bake for 20 minutes.
  6. In the meantime, make a glaze (if you choose to have one). I combined some Swerve Confectioners sugar substitute with lemon juice until I got my desired consistency.
  7. After the scones have cooled for about 5 minutes, top with your glaze & enjoy!

How Do You Store Leftovers?

I put my leftovers in an airtight container in a cool, dry place on my kitchen counter. They are good for about 5 days, if they even stand a chance for that long on your counters haha!
