Instant Pudding Brown Sugar Cookies

These Instant Pudding Brown Sugar Cookies are super soft, sugar free, and only 88 calories each! They are also super quick & easy to make! I love using the sugar free pudding and jell mixes by Simply Delish in my sweet dishes because they are made with all clean & natural ingredients! Ingredients

  • Flour – 1 1/8 cup of flour, either all purpose or oat flour.
  • Sugar Free Vanilla Pudding – I used a 1.7 ounce package of the Simply Delish Sugar Free & Keto Vanilla Pudding. You can actually use the code “KATIE10” for 10% off! Simply Delish has my favorite sugar free pudding and jel mixes. They are all plant based and made of natural, clean ingredients.
  • Unsalted Butter– 8 tablespoons of unsalted butter.
  • Brown Swerve – I used 1/3 cup of brown Swerve, which is my go-to when it comes to sugar alternatives. Swerve is a zero-calorie, low-glycemic sweetener that measures cup-for-cup to sugar. It’s completely safe and natural, with no artificial ingredients, preservatives or flavors. It is safe for diabetics and Keto approved. You can purchase Swerve off of Amazon here.
  • Egg – 1 large egg.
  • Baking Soda – 1/2 tsp baking soda.
  • Salt – 1/4 teaspoon.
  • Vanilla Extract – I used 1/2 teaspoon.

How To Make It

  1. Preheat your oven to 350°F. Line a large baking sheet with parchment paper or a silicone baking mat.
  2. Cream together the Brown Swerve and unsalted butter with an electric mixer until fluffy, about 4 minutes.
  3. Add in the egg & vanilla extract and cream together until fully incorporated. Then, slowly incorporate your dry ingredients and mix until just combined.
  4. Using a standard sized cookie scoop, scoop out 16 evenly sized cookies. Place the cookies about 1/2 an inch apart and slightly flatten the tops with your fingers.
  5. Bake for 12 minutes and enjoy!

How Do You Store Leftovers?

I put my leftovers in an airtight container in a cool, dry place on my kitchen counter. They are good for about 5-6 days, if they even stand a chance for that long on your counters haha!
