They are made with lean ground turkey, garlic, parmesan cheese, my favorite low carb bread crumb alternative, & are topped off with a tangy balsamic sauce. Pair these meatloaves with my Balsamic Roasted Green Beans & your dinner doesn’t stand a chance!

What You Will Need

For The Meatloaves

  • Ground Turkey – I used 3 pounds of 90% lean ground turkey. I prefer the brand Butterball. This recipe makes 24 mini meatloaves, so feel free to cut everything in half if this is too much for you! I make a lot since I meal prep!
  • Eggs – You will need 2 large eggs.
  • Sweet Onion – You can use any onion of choice, but I used half of a medium sweet onion and diced it finely.
  • Garlic – 1 teaspoon of minced garlic for flavor. Use more if you like a stronger garlic flavor.
  • Whisps Italian Cheese Crumbs – This is the ultimate bread crumb replacement! I am a huge fan of the brand Whisps. They recently launched a new product line – cheese crumbs. They are a bread crumb replacement and let me tell you…these are AMAZING! They have so many fun flavors and allow you to enjoy breaded food without the bread! You can get them off of Amazon here.
  • Parmesan Cheese – For flavor and to help hold the meatloaves together. You need 1/4 cup.
  • Parsley – You can use fresh or dried! I only had dried on hand at the time so I used 2 teaspoons of that.
  • Garlic Salt & Pepper – To taste.

For The Balsamic Sauce

  • Sugar Free Ketchup – 9 tablespoons of sugar free ketchup, which is just over 1/2 a cup.
  • Balsamic Vinegar – 8 teaspoons of balsamic vinegar. This sauce is so simple but one of my favorites!

How To Make It

  1. Preheat oven to 425°F. Spray 2 standard sized muffin tins with some non-stick spray, such as avocado oil.
  2. Combine the sugar free ketchup and balsamic vinegar for the sauce and set aside.
  3. In a large bowl, combine the ground turkey, eggs, onion, garlic, cheese crumbs, parmesan cheese, parsley, and spices until fully incorporated. I find it easiest to just use my hands!
  4. Fill each muffin with your meatloaf mixture so that you have a total of 24 meatloaves.
  5. Brush your balsamic sauce over the tops of each meat loaf using a silicone brush.
  6. Bake for 15-20 minutes. Serve with additional ketchup if desired and my Balsamic Roasted Green Beans!

How To Store Them

Store your mini meatloaves in an air tight container in the fridge for up to 4 days. When I rehear my meatloaves, I always add a little bit of additional sugar free ketchup on top because I fee that the meatloaves soak a lot of the sauce up when they are sitting in the fridge!

  • It boosts your metabolism & increases fat burning.

  • It lowers your blood pressure.
