Ingredients

  • 1 1/2 tbsp olive oil
  • 2 lbs. ground beef (organic, grass-fed, 85% lean)
  • 3 shallots (finely diced)
  • 1 large carrot (diced)
  • 2-3 sticks celery (diced)
  • 3 tsp. garlic (mined)
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1/4 tsp. garlic powder
  • 1/2 tbsp. Italian seasoning
  • 1/2 tsp. basil
  • Red pepper flakes, to taste
  • 2 tbsp. balsamic vinegar

  • 14 oz. diced tomatoes
  • 3 tbsp tomato paste
  • 1 16 oz. package gnocchi (gluten free if you need to).
  • 5 oz freshly grated cheddar cheese (about 1 1/2 cups, or cheese of choice)

How To Make It

  1. In a large wok or deep skillet, heat up the olive oil over medium heat. Add the shallots, carrot, celery, and garlic. Sauté for 4 to 5 minutes, or until the veggies have softened.
  2. Add in the ground beef. Mash up the ground beef and continue to cook until browned.
  3. Add the seasonings, balsamic vinegar, beef broth, diced tomatoes, & tomato paste. Turn the heat up to high and bring to a boil.
  4. Once boiling, add in the gnocchi. Be sure to completely submerge the gnocchi into the liquid so that it can fully cook.
  5. Continue to cook on high until the gnocchi is cooked through, about four minutes. Turn the heat down to low/medium and simmer for 5-7 minutes, or until the liquid has reduced.
  6. Sprinkle the freshly grated shredded cheese on top and reduce the heat to low. Allow the cheese to melt and then remove the pan from heat. Top with fresh basil if desired.

How To Store Leftovers

You can store your leftovers in an airtight container in the refrigerator for up to 4-5 days. When you are ready to enjoy them again, just pop them in the microwave for a minute or so!
