Flourless Peanut Butter Blossom Cookies

Peanut Butter Blossom cookies are a classic Christmas Cookie! I have made a healthier version of these that are SO macro friendly! These Peanut Butter Blossom cookies are flourless with no added sugar. Who would have known that it is still possible to enjoy a Christmas favorite sweet guilt-free?! Ingredients

  • Peanut Butter – 1 cup of creamy peanut butter. I used the brand Prozis. You can use the code KATIE10 for10% off on your order with them!
  • Egg – 1 large egg.
  • Swerve – 1/4-1/3 cup granular monk fruit or granular sweetener of choice.
  • Vanilla Extract – 1 teaspoon.
  • Baking Soda – 1/2 teaspoon.
  • Salt – 1/4 teaspoon of salt – Only if your peanut butter is not very salty.
  • Dark Chocolate – 16 pieces of chocolate

How To Make Them

  1. Preheat your oven to 350°F. Line a baking sheet with parchment paper or a silicone baking mat.
  2. Combine all ingredients in a large bowl until fully incorporated.
  3. Scoop out 16 cookies, placing them a half inch or so apart on your baking sheet.
  4. Bake for 11 minutes. Remove from oven and immediately top each cookie with a chocolate. Enjoy!

How Do I Store Leftovers?

You can store leftovers in an air tight container in a cool, dry place for up to 5 days, or in the refrigerator for up to a week. These will also freeze well for up to 3 months!
