Peanut Butter Chocolate Chip Protein Bars

Who doesn’t love a protein bar as a morning or mid-day snack? I do, but there are SO many protein bars out there that are full of crazy ingredients! I like to know exactly what is going into my body so homemade is the only way for me haha. These Peanut Butter Chocolate Chip Protein Bars are a quick & easy no bake recipe with clean, natural ingredients. Each protein bar has 12 grams of protein! The hardest part is waiting for these to cool & set in the fridge, I promise! I hope you give these protein bars a try and love them as much as I do! Ingredients

  • Peanut Butter – 1 cup of creamy peanut butter. I used the collagen peanut butter by the brand Prozis. You can use the code KATIE10 for10% off on your order with them!
  • Coconut Flour – 1/4 cup of coconut flour.
  • Maple Syrup – 1/4 cup of sugar free maple syrup. My favorite is by the brand Lakanto, because it does not contain sucralose and is sweetened with monk fruit! You can find it on Amazon here. You could also use honey or another liquid sweetener of choice.
  • Protein Powder – 60 grams of vanilla protein powder -My personal favorite is the natural vanilla whey isolate by the brand Prozis. You can actually use the code “KATIE10″ for 10% off!
  • Dark Chocolate Chips – 2 servings (28 grams) of Lily’s dark chocolate chips (I chopped mine up slightly).
  • Salt – 1 pinch of salt – Only if your peanut butter is not very salty.
  • Coconut Oil – 2 teaspoons of coconut oil, melted.

How To Make Them

  1. In a medium mixing bowl, beat together the peanut butter, syrup, and coconut oil with an electric mixer until smooth and creamy.
  2. Add in your protein powder, coconut flour, and salt. Beat until fully incorporated. Gently mix in the chocolate chips.
  3. Pour your batter into a 9×9 inch dish. I used a silicone baking dish so I could easily pop the protein bars out!
  4. Cover with plastic wrap and place in the fridge over night. Enjoy!

How Do I Store Leftovers?

You can store leftovers in an air tight container in the refrigerator for up to a week. These are so good I guarantee you won’t have these for very long though haha!

  1. In a medium mixing bowl, beat together the peanut butter, syrup, and coconut oil with an electric mixer until smooth and creamy.

  2. Add in your protein powder, coconut flour, and salt. Beat until fully incorporated. Gently mix in the chocolate chips.

  3. Pour your batter into a 9x9 inch dish. I used a silicone baking dish so I could easily pop the protein bars out!

  4. Cover with plastic wrap and place in the fridge overnight or for a few hours to firm up. Slice into 10 bars. Enjoy!
