Reasons to Love These Pancakes

  • Quick & Easy: These are super and easy to make and require very minimal ingredients and equipment.
  • High Protein: Each serving of pancakes (2) has a whopping 21 grams of protein. You can’t taste it and these do not have any sort of chalky taste from the protein powder thanks to the Greek yogurt!

Nutritional Benefits

  • Protein Powder: In addition to being extra protein, most protein powders are full of essential vitamins! Protein helps you stay fuller longer and is essential for muscle growth and maintaining muscle mass.
  • Oat Flour: Oats are extremely nutritious! They are rich in antioxidants and fiber. They are known to also help lower your cholesterol levels.
  • Greek Yogurt: Greek yogurt is a good source of protein, improved gut health, and can help boost your metabolism.

Ingredients

  • Oat Flour – 3/4 cup of oat flour. I used the Oats Instant Powder by Prozis for a fluffier texture. It is my go-to healthy flour substitute. You can also use the code KATIE10 for 10% off Prozis!
  • Protein Powder – 30 grams of vanilla protein powder. I use the Prozis natural vanilla whey isolate. If you want to try out their protein, you can use the code “KATIE10” for 10% off!
  • Baking Powder1 teaspoon, to make them fluffy.
  • Vanilla Extract – 1 teaspoon of vanilla extract.
  • Egg Whites – 3 tablespoons of liquid egg whites.
  • Greek Yogurt – 3/4 cup of plain, nonfat Greek yogurt.
  • Salt – Just a pinch!
  • Almond Milk – 1/2 cup of unsweetened vanilla almond milk, or your favorite milk.
  • Chocolate Chips – 1/4 cup of of Lily’s sugar free dark chocolate chips. You can use any sugar free chocolate chips, but I prefer these because they are naturally sweetened. The macros below assume this brand.

Pancake Toppings

Here are some of my favorite toppings for these pancakes:

  • Sugar free breakfast syrup (either classic or a flavored one, such as chocolate)
  • Fresh berries, such as raspberries or blueberries.
  • Sliced bananas.
  • Nut butter, such as cashew, almond, or peanut. Prozis has some awesome flavors such as caramel pecan almond butter and you can use the code KATIE10 for 10% off on their site.

How To Store Leftovers

You can store your leftovers in an airtight container in the refrigerator for up to 3 days. When you are ready to enjoy them again, just pop them in the microwave for 30 seconds or so! You can even freeze these as well. Defrost them in the fridge the night before you want to enjoy them again.
