The brand Enlightened recently launched a new sugar free caramel syrup and I am obsessed! It is keto friendly, sugar free, and only has 1 gram of net carbs per serving. This is a key ingredient for that gooey brownie center!

Ingredients
- Protein Powder – You will need 30 grams of vanilla flavored protein powder and 20 grams of cookies & cream protein powder. The protien powder I use is by the brand Prozis. You can use the code KATIE10 for 10% off on their website if you want to check them out!
- Oat Flour – 15 grams of oat flour (about 2 tbsp). I use the Prozis Instant Oats Powder and it is the king of all oat flours! It acts & tastes just like regular flour and because it is so ground up, it makes your baked goods so fluffy!
- Pecan Flour – 10 grams of pecan flour (2 1/4 teaspoons). You can also use almond flour or any nut flour of choice.
- Coconut Flour – 5 grams of your favorite coconut flour (about 1 teaspoon). Prozis makes a great one.
- Unsweetened Cocoa Powder – 5 grams (about 1 teaspoon) of unsweetened cocoa powder.
- Swerve – 1/2 teaspoon of granular Swerve, or any zero calorie sugar substitute of choice.
- Baking Soda – 1/2 teaspoon of baking soda.
- Greek Yogurt – 1/4 cup of plain, nonfat Greek yogurt (50 grams).
- Sugar Free Breakfast Syrup – 1/8 cup of your favorite sugar free breakfast syrup. I just use my local grocery store brand named kind.
- Egg Whites – 3 tablespoons of liquid egg whites. You could also use one large egg if you do not have gg whites on hand.
- Chocolate Chips – 10 grams of Lily’s sugar free dark chocolate chips, or your favorite brand of sugar free chocolate chips.
- Caramel Syrup – 2 tablespoons of your favorite sugar free caramel syrup. As mentioned above, I use the brand Enlightened.
- Sea Salt – to taste.
Instructions
- Preheat your air fryer to 300°F (I did for about 5 minutes while I was mixing my ingredients).
- Combine all ingredients into a medium mixing bowl except for the caramel syrup until fully incorporated.
- Spray two mini cast iron skillets with nonstick spray. Divide the batter evenly between the 2 skillets. The measurements of my mini cast iron skillets are about 4” x 6 1/2”.
- Add the caramel syrup in the middle of the batter.
- Air fry at 300 for 5-6 minutes (5 minutes for a gooey center or 6 if you want it more cake-like)
- Enjoy immediately!

How To Store Leftovers
If you have any leftovers, you can store them in the fridge for up to 3 days and reheat them in the microwave. These are so good that you probably won’t have any leftovers though haha!
