These Superfood Breakfast Cookies are packed with healthy whole grains & nuts, and taste INCREDIBLE! They have the perfect blend of sweetness and nuttiness. These cookies are so easy to make and only need 15 minutes in the oven too. They are a great grab-and-go snack or breakfast. These are my husband’s favorite healthy cookies that I make and rightfully so! This recipe makes 15 cookies. I hope you love this recipe and much as I do. Ingredients

  • Oats – You will need 1 cup of old fashioned rolled oats.
  • Oat Flour – 1/2 cup of oat flour.
  • Cranberries – 1/2 cup dried cranberries, unsweetened or reduced sugar.
  • Pepitas – 1/2 cup of lightly salted pepitas (pumpkin seeds with shells removed). You can find pumpkin seeds just about anywhere, but you can get them at a discount at Prozis with the discount code KATIE10!
  • Chia Seeds – 1 tablespoon of chia seeds
  • Cinnamon – 1 teaspoon.
  • Salt – 1/4 teaspoon.
  • Baking Powder – 1/2 teaspoon.
  • Coconut Oil – 3 tablespoons of organic coconut oil, melted. You can get this from Prozis as well at a discount with my code!!
  • Honey – 3 tablespoons of pure raw, unfiltered & organic honey.
  • Banana – 1 large banana, mashed.

How To Make It

  1. Preheat your oven to 325°F. Line a baking sheet with parchment paper and set aside.
  2. In a large mixing bowl, mash your banana. Mix in the melted coconut oil and honey.
  3. Add the remaining dry ingredients and mix until fully incorporated.
  4. Divide mixture into 15 cookies. Bake for 15 minutes and enjoy!

How To Store Leftovers

Store your leftover cookies in an airtight container in a cool, dry place for up to 1 week. You can also store them in the fridge for longer! I love giving these cookies a zap in the microwave before enjoying them again.
