This Sweet Potato Breakfast Hash is such a comforting savory breakfast dish! This recipe is on my top 10 list for sure of savory breakfasts! It is so quick and easy to make, and you can even make a whole bunch in bulk ahead of time to enjoy throughout the week. This is a super well balanced dish macro wise. It is also dairy free & gluten free! You can customize this hash in so many ways by using different potatoes, meat, and veggies. I hope you give this recipe a try and love it as much as I do!   • Sweet Potatoes: Sweet potatoes are a great source of fiber, vitamins, and minerals. They help support good gut health and support your immune system as well!
  • Turkey Sausage: Turkey sausage is my go-to breakfast protein over the traditional. It is way lower in saturated fat and calories. It is a great source of Vitamin B as well.

Ingredients

  • Olive Oil – 1 tablespoon of extra virgin olive oil.
  • Sweet Potatoes – 2 medium sweet potatoes (roughly 10 ounces), diced very small.
  • Bell Pepper – 1 large red bell pepper (or color of choice), diced.
  • Yellow Onion – 1/4 of a small yellow onion, diced.
  • Turkey Sausage – 6 ounces of turkey sausage, cooked. I used the Butterball Smoked Turkey Sausage Link.
  • Dan-O’s Everything Bagel Seasoning – 1-2 teaspoons of Dan-O’s Everything Bagel Seasoning – Use the Code COOKINGKATIE for 10% off!
  • Salt & Pepper – To taste.

How To Make It

  1. Heat up a large skillet or wok over medium/high heat with the olive oil. I used my HexClad 14″ Hybrid Wok.
  2. Add the sweet potatoes and cook until softened, about 7 minutes. Season them with the everything bagel seasoning, salt, and pepper.
  3. Add in the onion and cook for another two minutes, or until fragrant. Then add in your bell pepper and cook for another 2 minutes.
  4. Stir in your cooked sausage. Serve & enjoy!

How To Store Leftovers

You can store your leftovers in an airtight container in the refrigerator for up to 4 days. When you are ready to enjoy them again, just pop them in the microwave for 45 seconds or so. I prefer to make my fried egg to go with this has fresh before I reheat my hash, but if you are short on time in the mornings fried eggs heat up ok in the microwave, but don’t put them in the microwave for too long! Keep them seperate.
