This Unstuffed Bell Pepper Skillet allows you to enjoy delicious stuffed bell peppers without all of the stuffing labor! It is also a one pan meal, so less dishes for you! The deal between my husband and I is if I cook, he cleans the dishes so he’s a big fan of this meal haha! This meal is super well balanced in macros and so nice be cause you get your protein, veggies, and carbs all in one quick meal! Reasons to Love This Skillet

  • Quick & Easy: This super and easy to make and require very simple ingredients and equipment. I love me some one pan meals! It is a great meal prepping dish because it reheats excellent too!
  • Macros/Nutritious: Turkey is a very lean meat and a healthier substitution for ground beef. It is relatively low in calories and high in protein! The dish as a whole is super well-balanced in macros and an easy way to get your protein, fats, carbs, and veggies all in one meal.

Nutritional Benefits

  • Turkey: Ground turkey is rich in protein, vitamin B, and other minerals, such as zinc.
  • Bell Peppers: Bell Peppers are an excellent source of Vitamin C (especially the bright red ones!!). They also contain Vitamin C, fiber, and antioxidant properies.
  • Jasmine Rice: Jasmine rice is rich in iron and can help in the production of red blood cells! Jasmine rice also has more protein and fiber than regular white rice.

Ingredients

  • Turkey – 2 pounds of 90% lean ground turkey.
  • Yellow Onion – 1 small yellow onion, finely diced.
  • Bell Peppers – 3 large bell peppers, colors of choice.
  • Chili Powder – 1/4 teaspoon of chili powder.
  • Cayenne Pepper – 1/4 teaspoon.
  • Paprika – 1/2 teaspoon.
  • Oregano – 2 teaspoons of oregano, dried.
  • Garlic Salt – 1 teaspoon.
  • Pepper – 1/2 teaspoon, or to taste.
  • Balsamic Vinegar – 1 tablespoon of balsamic vinegar.
  • Chicken Broth – 2 cups of low sodium chicken broth.
  • Diced Tomatoes – 1 15-ounce can of petite diced tomatoes.
  • Tomato Paste – One 8-ounce can of tomato paste.
  • Jasmine Rice – 1 1/4 cup of jasmine rice, uncooked.
  • Optional – Cheese for topping. Obviously omit the cheese if you are dairy free! I added about 1/4 cup on top. Macros below do not include the cheese.

How To Make It

  1. Preheat a large wok over medium/high heat. I used by HexClad 14″ Wok. Start cooking the ground turkey for 5 min or so. Add in your bell peppers, onion, and seasonings. Cook for 3-4 minutes or until the meat is almost fully cooked.
  2. Add in your balsamic vinegar, diced tomatoes, tomato paste, and chicken broth. Stir until fully combined.
  3. Add in the jasmine rice and bring to a boil. Simmer for 20 minutes. Give it a good stir and enjoy! Melt a little bit of cheese on top of you would like as well if you are not dairy free.

How To Store Leftovers

You can store your leftovers in an airtight container in the refrigerator for up to 4 days. When you are ready to enjoy them again, just pop them in the microwave for a minute and a half or so! This dish reheats excellent.
