Ingredients

For the French Toast:

  • Almond Milk – I used 1/2 cup of unsweetened vanilla flavored almond milk. You can use any kind of milk you would like though, such at oat milk.
  • Egg – 1 large egg
  • Protein Powder – Use 30 grams of your preferred protein powder. My personal favorite protein powder is by the brand Prozis (either the zero diet whey vanilla or the natural vanilla whey isolate). You can use the discount code “KATIE10″ for 10% off at Prozis!
  • Cinnamon – I used 1/4 teaspoon of ground cinnamon.
  • Vanilla Extract– I used 1 teaspoon, for flavor.
  • Salt – Just a pinch

For the Filling:

  • 3 tablespoons organic cream cheese
  • 2 tsp lemon juice, freshly squeezed
  • 1/4 cup plain, nonfat, Greek yogurt
  • 2/3 cup fresh blueberries

How To Make It

  1. In a small blender, combine the egg, almond milk, vanilla extract, protein powder, and pinch of salt. Blend, pour into a bowl, and set aside.
  2. In a small mixing bowl, combine the the cream cheese, lemon juice, Greek yogurt, and blueberries. Spread mixture evenly among 3 slices of bread. Top with remaining 3 slices of bread to create a “sandwich”.
  3. Preheat a large skillet or griddle with a little bit of butter or over medium heat.
  4. Drench each piece of stuffed French toast generously in the protein egg mixture.
  5. Place each slice in your preheated skillet and cook for about 2-3 minutes on each side. Enjoy!
