Ingredients

  • 2 large slices of bread – I use my homemade sourdough!
  • Spicy mayo – I used about 2 tbsp of Primal Kitchen Spicy Mayo (super clean brand!)
  • Grilled chicken breast – I just seasoned mine with some garlic salt & pepper. Doesn’t need much with everything else in this sandwich!
  • Havarti cheese – I used a Jalapeno flavored one from my local Publix. SO GOOD! I used 2 oz. approximately.
  • Thinly sliced roma tomatoes (I did 3 slices)
  • Sun dried tomatoes (I did about 1 tbsp of chopped sun dried tomatoes)
  • Pepperoncini peppers
  • Pickled onions – I made pickled red onions from scratch, 1 small handful.
  • Avocado, sliced thin. I used 1/2 an avocado in my sandwich.
  • 1 large handful of microgreens – I used the rainbow mix by Bright Fresh.

How To Make It

  1. Lightly butter a large nonstick pan over medium heat.
  2. Smear 1-2 tbsp of spicy mayo on the inside of both slices of bread (1 tbsp per side).
  3. On one of the slices, layer on the following: grilled chicken, Havarti cheese, tomato slices, sun-dried, tomatoes, pepperoncini peppers, pickled onions, avocado, & a large handful of microgreens. The order doesn’t matter too much, just whatever make sense to you!
  4. Top the sandwich off with the other piece of bread once the bread looks nice and golden on the buttered side. Remove from heat and dig in immediately!
