- Eggs– 4 large eggs.

- Greek Yogurt – 1/4 cup of plain, nonfat Greek Yogurt
- Swerve/Monk Fruit – 1/4 cup granular monk fruit, or sweetener of choice.
- Baking Powder – 1 tablespoon of baking powder.
- Vanilla Extract – 1 teaspoon of vanilla extract.

How To Make Them
- Preheat your oven to 350°F. Line a standard sized loaf pan with parchment paper.
- Combine all of the ingredients in a blender until creamy.
- Pour into your prepared loaf pan. Bake for 30 minutes.
- Remove from pan when safe to touch. Slice into 8 evenly sized French toast sticks.
- Heat up a skillet with a little bit of butter and sear the French toast sticks on all sides.
- Serve with sugar free syrup and enjoy!
How To Store Leftovers
You can store your leftovers in an airtight container in the refrigerator for up to 4 days. When you are ready to enjoy them again, just pop them in the microwave for 30 seconds or so. You can most certainly freeze these as well!

This recipe is definitely a keeper. It did mot have the eggy taste like the pancakes I have tried. 1 key thing to note. I had to double the baking time because only the top cooked. The rest was runny. So I added aluminum foil on top and continued baking. After it cooled down I wrapped the loaf in the parchment it baked in and covered ot in foil and put in the refrigerator. The next day, I sliced it up into about 8 slices then toasted the slices in my oven on both side until browned. I then sliced each slice into thirds for sticks. Each serving was 1 slice cut into thirds. To warm up, I put in the microwave with a pat of butter. They stayed moist and are absolutely delicious! Thanks for sharing this recipe. I double the recipe also.
