Flourless Pumpkin Pie Bars

These Flourless Pumpkin Pie Bars are lower carb, no added sugar handheld pumpkin pies! And they taste IDENTICAL to pumpkin pie y’all. These bars do not have a crust to keep the carbs low, but you could certainly add one if you would like! No one will believe you that these are healthy when they try them lol. Did I mention that they are under 100 calories each too?! If you slice them into 16 squares they are 52 calories each and if you slice them into 9 squares they are 92 calories each! Ingredients

  • 1 cup pumpkin purée
  • 1 egg
  • ⅓ cup almond butter
  • ⅓ cup maple syrup (or sweetener of choice)
  • ½ tsp vanilla extract
  • 30g unflavored protein powder
  • 2 tbsp golden monk fruit (optional if you like it sweet)
  • 2 tsp pumpkin pie spice
  • ½ tsp baking soda
  • Pinch of salt
  • 1/2 tbsp maple syrup +1/8 cup powdered monk fruit for the glaze.

I use the Lakanto monk fruit maple syrup as a low calorie/sugar option, but feel free to use pure organic maple syrup if you would like! Everybody has different dietary needs.

How To Make Them

  1. Preheat your oven to 350°. Line a 8×8 baking dish with parchment paper.
  2. Mix all of the pumpkin bar ingredients until smooth.
  3. Pour the mixture into your prepared baking dish. Place it into the oven and bake the bars for 35 minutes or until the center has set.
  4. Let the bars cool completely (this is important!). Make the maple glaze by whisking together the maple syrup and powdered monk fruit together, then drizzle it over the bars.
  5. Slice into 9 large or 16 small bars and enjoy!

How To Store Leftovers

You can store your leftovers in an airtight container in the refrigerator for up to 5 days. I like them cold, but you could certainly warm these up too!
