After Thanksgiving and Christmas, you have probably been in a position where you have a fridge full of leftover turkey, ham, and a few too many sides. If you’re looking for a quick, easy, and delicious way to use up those leftovers, look no further than these Ham & Cheese Sliders. They are one of those super simple but absolutely delicious recipes. The sweet poppyseed sauce/dressing is what really make these stand out. It soaks into the rolls as they are baking in the oven and are bursting with flavor. You can make these on leftover dinner rolls or croissants and even add additional leftovers in the rolls such as cranberry sauce, potatoes, etc.! They are truly so customizable and versatile.

These sliders are on my husband’s “top 5” list of his favorite dishes if that tells you anything. Which it is crazy, because these are one of the easiest recipes out there haha! But really, they are that good.

Why These Sliders Are a Game-Changer

First, let’s talk about the key components that make these sliders stand out. You start with soft, sweet rolls (think Hawaiian-style or slider rolls), layer in your leftover ham and turkey (or just ham, if that’s all you’ve got!), and then top it all with melty Swiss or cheddar cheese. But the real magic happens when you pour over the sweet poppyseed sauce. It’s a simple blend of butter, dijon mustard, brown “sugar” (I use monk fruit), and poppyseeds that soaks into the rolls, creating a flavor profile that is both savory and sweet, with just the right amount of tang from the mustard.

The result? A gooey, golden-brown sandwich that’s crispy on the outside and melt-in-your-mouth tender on the inside. Plus, they’re so easy to assemble, you’ll wonder why you didn’t make these sooner!

Ingredients

  • 12 rolls (I used homemade sourdough Hawaiian rolls)
  • 4 tbsp butter (grass-fed; use unsalted if you have salty/seasoned meat)
  • 1 tsp garlic powder
  • 1/2 tbsp poppyseeds
  • 1 tsp parsley
  • 2 tbsp brown monk fruit (or coconut sugar or sweetener of choice)
  • 1/2 tbsp dijon mustard
  • 1 tsp Worcestershire sauce
  • Leftover ham/turkey
  • Cheese of choice (Swiss, cheddar, etc.; I used sharp white cheddar in this video)

How To Make Them

  1. Preheat your oven to 350F. Grease a 9×13 inch baking dish. Set aside.
  2. Cut your rolls in half and lay the bottom halves down in your baking dish.
  3. In a medium sized measuring cup, whisk the butter, garlic powder, poppyseeds, parsley, monk fruit, dijon mustard, and Worcestershire sauce. Set aside.
  4. Layer on your ham (or turkey) and cheese on the rolls and then place the top half of the rolls on top.
  5. Drizzle the poppyseed sauce over the tops of the rolls. Use a pastry brush to evenly spread the sauce over all of the rolls.
  6. Bake for 15 minutes and enjoy!

Why You’ll Love These Sliders

Make-Ahead Option: You can assemble the sliders in advance and refrigerate them for a few hours or even overnight. When you’re ready to eat, just pop them in the oven for an easy, stress-free meal.

They’re Versatile: Whether you’re using leftover ham, turkey, or even roast beef, these sliders are customizable to whatever you have in the fridge.

Great for Parties or Quick Meals: These sliders are perfect for feeding a crowd at your next holiday gathering, or just for a quick and easy meal on a lazy day.

The Sweet Poppyseed Sauce is Everything: That sauce? It’s a total game-changer. The sweetness from the monk fruit and tang from the mustard complement the savory ham and cheese perfectly. As the sauce soaks into the rolls, it creates a delightful balance of flavors that keeps you coming back for more.
