We all love smashed potatoes but have you ever had buffalo smashed potatoes? It is a GAME CHANGER. These Healthy Buffalo Smashed Potatoes are a fun twist on the viral smashed potatoes. They are topped with my healthy goat cheese dressing, zesty buffalo sauce, jalapenos, and green onions. Feel free to customize these with any of your favorite toppings. Ingredients
Potatoes:
- 3 lbs baby yellow potatoes
- 2 tbsp olive/avocado oil
- Salt & pepper to taste
- 1/2 cup buffalo sauce
- 2 tbsp chopped chives
- One jalapeño, sliced
- Green onions, to taste
- Goat cheese dressing (recipe below)
Healthy Goat Cheese Dressing
- 1/4 cup Greek yogurt (can also use sour cream)
- 1/4 cup mayo
- 1/4 cup crumbled goat cheese
- 2 tbsp white wine vinegar
- 1 tbsp chopped chives
- 1/2 tsp garlic powder
- Salt & pepper to taste
Instructions
- Put the potatoes in large saucepan and fill with water. Be sure there is at least 1-inch of water above the potatoes. Add a sprinkle of salt. Bring to a boil and cook the potatoes until they are tender and can be easily pierced, about 35 minutes. Drain and let cool slightly.
- Preheat your oven to 450°F. Prepare a large baking sheet with parchment paper. With a small ramekin, smash the potatoes down on your lined baking sheet. Drizzle with oil & sprinkle with salt.
- Roast potatoes until they’re crisp and deep brown around the edges, about 40 minutes (I put my oven on broil for the last couple of minutes).
- After they are done baking, top with buffalo sauce, my homemade goat cheese sauce, chives, green onions, jalapeños slices, or anything else you’d like!
How To Store Leftovers
Store them in an air tight container in the fridge for up to 4 days. You can reheat them in the microwave for a minute or so. You can also reheat them in he oven at 350 for about 10 minutes to be more crispy.
