This Shrimp Ceviche is an awesome healthy appetizer or snack that is packed with protein and fresh ingredients! The shrimp is marinated in lime juice and made with fresh vegetables including cucumber, tomato, jalapeno, red onion, and more. Nutritional Benefits

  • Shrimp: Shrimp is probably my favorite protein no joke. Shrimp is so low in calories but packed with protein! It is also a great source of iodine, phosphorus, zinc, and magnesium.
  • Veggies – This ceviche is packed with fresh veggies that are full of essential vitamins!

Ingredients

  • Shrimp – 2 pounds of shrimp – Cooked, peeled, deveined and diced small.
  • Lime Juice – 1 cup of freshly squeezed lime juice (approximately 6 limes)
  • Cucumber – 1 medium cucumber, peeled and diced finely.
  • Avocado – 1 large ripe (but not too ripe) avocado or 2 small, diced.
  • Roma Tomatoes – 2 roma tomatoes, diced.
  • Red Onion – 1/2 medium red onion, diced.
  • Cilantro – 1/4 bunch cilantro, chopped.
  • Jalapeno – 1 jalapeno, seeded and minced.
  • Clamato Juice – 1/2 cup clamato juice.
  • Pepper – 1/2 teaspoon pepper.

How To Make It

  1. Place the shrimp into a large bowl. Pour the lime juice over the shrimp. Stir to combine and then cover and marinate in the refrigerator for 30 minutes.
  2. In a separate large bowl, combine all of the vegetables. When shrimp is done marinating, add the shrimp to the bowl.
  3. Add the black pepper and clamato juice, mixing just to combine. Serve over a tostada or with your favorite crackers or chips. Enjoy!

** If you want to make traditional ceviche with the raw shrimp marinate in a glass bowl for 2 hours to allow the lime juice to cook the shrimp, stirring half way through.
