Lemon & Feta Grilled Asparagus Salad

As the sun lingers longer in the sky and the days grow warmer, there’s a natural shift in our cravings towards lighter, fresher food. One dish that perfectly encapsulates the essence of summer dining is my Lemon & Feta Grilled Asparagus Salad. Vibrant, nutritious, and bursting with flavor, this recipe not only celebrates seasonal produce but also offers a delightful balance of textures and tastes.

Asparagus is rich in vitamins A, C, E, and K, as well as fiber, which supports digestion and overall health. This side dish goes with practically ANY meal and is so quick & easy. Another great universal side salad that I know you will love is my Bell Pepper & Goat Cheese Protein Pasta Salad.

Ingredients

  • 3 tbsp minced shallots (1 1/2-2 shallots)
  • 2 tsp garlic, minced
  • 2 tbsp fresh lemon juice
  • Zest of 1 lemon
  • 1/3 cup plus 1 tbsp. olive oil
  • Salt & pepper to taste
  • 1 lb. asparagus, wide ends cut off & chopped in half diagonally
  • 1/3 cup unsalted pistachios
  • 3 tbsp fresh chopped dill
  • 2 oz. feta cheese

How To Make It

  1. Prepare the dressing by combining half the shallots, lemon juice, lemon zest, 1/3 cup olive oil, and salt & black pepper to taste. Set aside.
  2. Heat remaining 1 tablespoon of olive oil in a large skillet over medium heat. Once hot, add garlic and remaining shallots. Sauté for 1 minute. Add the asparagus and sauté for 5 minutes, tossing occasionally, until crisp-tender. Season with salt & pepper to taste. Turn off heat & sit for 5 minutes.
  3. In a mixing bowl, combine the asparagus, dill, pistachios, feta cheese, and dressing. Toss to combine & enjoy!
