One dish that perfectly encapsulates the essence of summer dining is my Lemon & Feta Grilled Asparagus Salad. Vibrant, nutritious, and bursting with flavor, this recipe not only celebrates seasonal produce but also offers a delightful balance of textures and tastes.

Ingredients
- 3 tbsp minced shallots (1 1/2-2 shallots)
- 2 tsp garlic, minced
- 2 tbsp fresh lemon juice
- Zest of 1 lemon
- 1/3 cup plus 1 tbsp. olive oil
- Salt & pepper to taste
- 1 lb. asparagus, wide ends cut off & chopped in half diagonally
- 1/3 cup unsalted pistachios
- 3 tbsp fresh chopped dill
- 2 oz. feta cheese
How To Make It
- Prepare the dressing by combining half the shallots, lemon juice, lemon zest, 1/3 cup olive oil, and salt & black pepper to taste. Set aside.
- Heat remaining 1 tablespoon of olive oil in a large skillet over medium heat. Once hot, add garlic and remaining shallots. Sauté for 1 minute. Add the asparagus and sauté for 5 minutes, tossing occasionally, until crisp-tender. Season with salt & pepper to taste. Turn off heat & sit for 5 minutes.
- In a mixing bowl, combine the asparagus, dill, pistachios, feta cheese, and dressing. Toss to combine & enjoy!
