Ingredients

  • Flour – 3/4 cup of flour – Oat and all-purpose work great.
  • Baking Powder – 1/2 teaspoon of baking powder.
  • Salt – 1/4 teaspoon of salt.

  • Sweetener – 1/2 cup monk fruit (or granular sweetener of choice)
  • Greek Yogurt – 1 cup of plain, nonfat Greek yogurt.
  • Almond Milk – 1/2 cup of unsweetened almond milk.
  • Chocolate Chips – 90 grams of Hu dark chocolate chips. You can use your favorite kind of chocolate chips of course, but I love these because they are organic and have no harmful ingredients.

How To Make Them

  1. Preheat your oven to 350°F. Line an 8×8 in glass baking dish with nonstick spray and set aside.
  2. In a large bowl, whisk together all of the dry ingredients. Mix in the wet ingredients & mix just until fully incorporated. Do not over mix! The batter should be fairly thick, but add another splash of almond milk if it seems too thick.
  3. In a microwave-safe bowl, melt your chocolate chips (add a little bit of coconut oil if needed). Pour into your brownie batter & gently fold.
  4. Transfer to your prepared baking dish and top with additional chocolate chips if desired. Bake the brownies for 30-35 minutes and enjoy!

How To Store Leftovers

You can store your leftovers in an airtight container in the refrigerator for up to 5 days. When you are ready to enjoy them again, just pop them in the microwave for 10 seconds or so. I keep mine in the fridge due to the Greek yogurt in them!
