This is one of my favorite casseroles of all time. It is so cheesy, gooey, and comforting without all of the guilt! It is also super easy to make and requires very basic ingredients. If you like this recipe, you will also love my Low Carb Turkey Taco Cauliflower Rice Skillet.

What You Will Need
- Carb Counter Street Tortillas – 8 tortillas of choice. I love using homemade tortillas, but if you are in a time crunch, you can opt for store bought. If you want to be low carb, try carb counter tortillas.
- Ground Beef or Turkey – 2 pounds of lean ground turkey or organic grass-fed ground beef.
- Refried Beans – 8 ounces can of organic refried pinto beans. I like the brand Siete.
- Red Enchilada Sauce – 15 ounces of red enchilada sauce. I also use the brand Siete. SUPER clean ingredients.
- Fiesta Cheese – 1 1/4 cup of shredded fiesta style cheese, or your favorite kind of cheese.
- Yellow Onion – 1/2 of a large yellow onion, diced. A sweet onion or white will work too.
- Garlic – 2 teaspoons of minced garlic.
- Olive Oil – 1/2 tablespoon of extra virgin olive oil,
- Dan-O’s – 1 teaspoon of Dan-O’s Chipotle Seasoning. This is the best all-purpose seasoning to ever exist because it is low in sodium so you can really add some flavor with this! It’s also zero calories. Use the code “COOKINGKATIE″ for 10% off at Dan-O’s!
- Garlic Salt – 1/2 teaspoon.
- Onion Powder – 1/2 teaspoon.
- Cumin – 1 teaspoon.
How To Make It
- Preheat your oven to 400°F. Spray a 9×11 glass baking dish with nonstick spray.
- Preheat a large saucepan over medium/high heat with the olive oil.
- Add your onion and garlic and sauté for a minute or two, or until fragrant.
- Add in your ground turkey or beef and cook until browned. Once it is browned, turn the heat down to medium.
- Add in your chipotle seasoning, garlic salt, onion powder, cumin, and beans. Mix until thoroughly incorporated and turn off the heat.
- Pour 1/3 of the enchilada sauce on the bottom of the baking dish. Then add 4 tortillas on top of the enchilada sauce.
- Spread half of the meat/bean mixture on top of the tortillas, another 1/3 of the enchilada sauce, and then half of the cheese.
- Add the remaining 4 tortillas on top, and repeat this step with the remaining ingredients.
- Bake for 20 minutes. Let sit 5-10 minutes before slicing and serving. Enjoy!
How To Store Leftovers
You can store your leftovers in an airtight container in the refrigerator for up to 5 days. Top reheat, just pop a serving in the microwave for a minute to a minute and a half! These reheat excellent!!
