Ingredients

For the French Toast:

  • 1 egg
  • 1/3 cup unsweetened almond milk
  • 30g vanilla protein powder – I use Truvani. You can use the discount code KATIE10 for a discount here.
  • 1 tsp vanilla extract
  • 1/4 tsp cinnamon

For the Filling:

  • 1/4 cup plain, nonfat Greek yogurt
  • 2 tbsp organic cream cheese, softened
  • 1 tsp fresh lemon juice
  • Zest of 1 lemon
  • 2/3 cup finely chopped strawberries (3-4 large)

How To Make It

  1. In a small blender, combine the egg, almond milk, protein powder, vanilla extract, and cinnamon. Blend until smooth. Pour the mixture into a shallow dish and set aside.
  2. In a separate bowl, mix all the filling ingredients together. Divide the mixture evenly between the middle of the two challah rolls.
  3. Generously dip each stuffed roll into the egg mixture, ensuring they are thoroughly soaked. Allow the rolls to sit in the batter for a few minutes to absorb the batter.
  4. Heat a griddle or skillet over medium heat. Cook the rolls for 3-4 minutes on each side, or until golden brown. For a crispier texture, sear the edges of the rolls as well for about 20-30 seconds.
  5. Serve warm with your favorite organic maple syrup and enjoy!
