This Strawberry Cheesecake Stuffed Protein French Toast is arguably the best French toast flavor in the world! It’s not too sweet and actually so easy to make! You will definitely impress whoever you make these for and it will look like you put so much effort into making them. You get so much protein in without even realizing it and it’s macro friendly too! Ingredients

For the French Toast:

  • 4 large slices of bread – I used large, thick homemade sourdough bread, which is out of this world!! The Eat Royo Artisan Bread s a great low carb option if you need/want. They are only 30 calories a slice! Use the code COOKINGKATIELADY at checkout to get 10% off your order!
  • 1 egg
  • 1/3 cup unsweetened almond milk
  • 30g vanilla protein powder – I used the brand Prozis. You can use the discount code “KATIE10″ for 10% off at Prozis!
  • 1 tsp vanilla extract
  • 1/4 tsp cinnamon

For the Filling:

  • 1/4 cup plain, nonfat Greek yogurt
  • 2 tbsp organic cream cheese, softened
  • 1 tsp fresh lemon juice
  • 2/3 cup finely chopped strawberries (3-4 large)

How To Make It

  1. In a small blender, blend the egg, almond milk, protein powder, vanilla extract, and cinnamon. Pour into a shallow dish and set aside.
  2. In a small bowl, combine all the filling ingredients and divide among two slices of bread. Top with remaining 2 slices of bread so that you have a “sandwich”.
  3. Soak each piece of stuffed French toast in the egg mixture generously. If you have smaller pieces of bread, you may be able to make additional stuffed French toast pieces.
  4. Cook on a griddle or pan for about 3-4 minutes each side. Top with syrup and enjoy!

You can keep your protein French toast in an airtight container in the fridge for up to 3 days! These can be a great breakfast meal prep. To reheat them, just pop them in the microwave for about 20 seconds. They don’t need much time to warm up at all!
