Strawberry, Avocado & Goat Cheese Salad

This Strawberry, Avocado & Goat Cheese Salad is such a nutritious and refreshing salad for the Spring & Summer months! This is one of my all time favorite salads by far. It has the perfect balance of crunch and tanginess too. And might I just add it’s a gorgeous colorful salad!! If you like this recipe, be sure to try my Blueberry Apple Walnut Salad as well!

What You Will Need:

Salad:

  • 8 oz. strawberries (roughly 8 strawberries)
  • 3 oz. roughly chopped almonds (2/3 cup, unsalted)
  • 6 oz. arugula/spinach mix
  • 1 1/2 large has avocado, chopped
  • 2 oz. goat cheese
  • 1 1/2 oz. chopped pistachios (1/3 cup, unsalted)

Dressing:

  • 3 tbsp white wine vinegar
  • 1/4 cup olive oil
  • 1 lemon, juiced (1/4 cup)
  • 1/2 tsp minced garlic
  • 2 tbsp honey
  • 1 tsp Dijon mustard
  • Salt & pepper to taste

How To Make It

  1. Whisk together all of the dressing ingredients and set aside.
  2. In a large mixing bowl, combine the spinach/arugula mix, strawberries, avocado, nuts, and goat cheese.
  3. Top with dressing. Mix well to combine and enjoy!

How To Store Leftovers

If you end up having any leftovers, you can store them in an air tight container in the fridge for 3 days.
