Air Fryer Buffalo Chicken Bites

Say goodbye to bread crumbs! This is such an awesome way to get crispy chicken bites without all the carbs! These Low Carb Air Fryer Buffalo Chicken Bites are crispy, tangy, and have a juicy center. Top these off with some buffalo sauce and you’ll be in food heaven. These work great as a main course or a snack/appetizer!

This recipe makes 6 servings so it feeds a good amount of people! These Low Carb Buffalo Chicken Bites are also very low in calories and packed with protein!

Ingredients

  • Boneless, Skinless Chicken Breasts – Cut into bite size pieces
  • Large Eggs – Whisked in a small bowl.
  • Whisps Buffalo Cheese Crumbs – I am a huge fan of the brand Whisps. Fairly recently they launched a new product line – cheese crumbs. They are a bread crumb replacement and let me tell you…these are AMAZING! They have so many fun flavors and allow you to enjoy breaded food without the bread! You can get them off of Amazon here.
  • Unflavored Protein Powder –  I used Prozis Real Whey Isolate Unflavored Protein Powder to help “bread” my chicken rather than using flour. This also adds so much more protein to your chicken bites.
  • Buffalo Sauce – To top off your buffalo chicken bites! This is optional of course, but highly recommended!

How To Make It

  1. Dip each chicken bite in the whisked egg.
  2. Coat each piece of chicken in the unflavored protein powder and then back into the whisked eggs.
  3. Coat each piece of chicken in the Whisps Buffalo cheese crumbs.
  4. Place chicken bites in the air fryer and spray with a little bit of nonstick spray. Air Fry at 400°F for 20 minutes, flipping half way through.
  5. Top with Buffalo sauce if desired.

So I actually own three different air fryers and my favorite one by far is by the brand Ninja. Not only does this air fryer cook food perfectly, but it can also be a pressure cooker at the same time! This is great if you don’t have much kitchen space. How To Store Leftovers

You can store your leftover buffalo chicken bites in an air tight container in the fridge for up to 4 days. When you are ready to enjoy your leftovers, just pop them in the microwave for a minute or so. If you want them to be more crispy, you can also reheat them in the oven. Place your chicken in the oven at 325°F for 10 minutes, or until completely warmed.

These Air Fryer Cauliflower Buffalo Bites are a healthy spin on your typical breaded buffalo wings or bites, using cauliflower florets, almond flour, and the perfect blend of seasonings. They only take 5 minutes to prepare and all you have to do is pop them in the air fryer! There are only 80 calories & 4 grams of net carbs per serving!

Instructions

  1. Wash & dry your cauliflower. Place in a large mixing bowl.

  2. Pour the buffalo sauce over the cauliflower and coat them REALLY well. You don’t want to see any white from the cauliflower. I placed a small cutting board over my bowl and shook it to get all of mine coated. Set aside.

  3. In a separate small bowl, combine almond flour and spices. Mix thoroughly and pour over the cauliflower. Toss until each piece is well coated.

  4. Place your wings into the air fryer in a single layer. Air fry at 375°F for 20-25 minutes, flipping half way through.

  5. Serve with your favorite dipping sauce & enjoy!
