Ingredients

  • 8 large pitted medjool dates

  • 1 large ripe banana (sliced into 16 slices)
  • 1 cup thick nonfat Greek yogurt
  • Thick nut butter (1 tsp each per cluster; I use almond butter)
  • 120g (1 1/4 cup) organic chocolate chips (I use Hu)
  • 1 tsp coconut oil
  • Sea salt

How To Make Them

  1. Open up each date and split in half. Flatten each half out as much as possible and line along a parchment lined baking sheet or large plate.
  2. In a small bowl, combine the sliced bananas and Greek yogurt. Try not to smash the bananas. Divide the mixture among all the date halves (one yogurt coated banana slice per date half). Place in freezer for 30 minutes.
  3. Remove from freezer. Layer on about 1 tsp of almond butter (or nut butter of choice) on top of each ice cream bite. Place in the freezer for another 30 minutes.
  4. Melt the chocolate chips and coconut oil together in the microwave. Remove the ice cream date bites from the freezer. Dunk each bite into the melted chocolate. Top with sea salt and freeze for another 10 minutes. Enjoy! See storing instructions below.

How To Store

If storing in the freezer – Take the frozen yogurt bites out 15-20 minutes before enjoying so that the Greek yogurt can thaw and have that yummy ice cream texture.

If storing in the fridge – Place in the freezer for 15-20 minutes for the Greek yogurt to firm up and have more of that that firmer ice cream texture.

Both ways work just as well! I personally store mine in the freezer because I make these in bulk and take them out as needed.
