Great news! You no longer have to dine at fancy restaurants to enjoy a Crème Brûlée . This Keto Crème Brûlée is smooth, creamy, and not too sweet, topped with the most beautiful caramelized shell. It is truly my favorite Crème Brûlée recipe. All equipment I used is linked below!

Equipment/Products I Used

Swerve

I use Swerve in almost all of my sugar free recipes. For this one, I used the granular version as a substitute for sugar. If you are not familiar with Swerve, it is a zero-calorie, low-glycemic sweetener that measures cup-for-cup to sugar. It’s completely save and natural, with no artificial ingredients, preservatives or flavors. It is safe for diabetics and Keto approved. I am not Keto, but I do follow a lower carb diet and using Swerve really helps with having a healthy balance of carbs! You can purchase Swerve here.

6 oz. Oven-Safe Ramekins

I have found the cutest oven-save ramekins to exist in my favorite color! You can find the exact ones I purchased here. It comes with 6 6 oz. porcelain ramekins. For this recipe, I used 4 of the ramekins and split each one in half because this dessert is very rich! Not only are these just the cutest ramekins ever, but they are also very strong and safe to put in the microwave, freezer, dishwasher, and oven up to 500°F.

Butane Torch

A butane torch is crucial to obtain that caramelized shell in crème brûlée. I used the Sondiko Refillable Butane Torch. You can purchase one here. I would highly recommend this one because it is extremely affordable, has an adjustable flame, and a safety lock. Oh, and it works amazing!

You seriously can’t beat the price for what you get with this butane torch. You do have to purchase the butane gas separately for safe shipping purposes. Here is the butane gas that I purchased from Zippo, but you can use any kind you want!

Instructions

  1. Preheat your oven to 325° F. Spray 4 6 oz. ramekins lightly with nonstick spray (or 8 small ramekins).

  2. In a medium saucepan, combine the heavy cream, vanilla extract, and dash of salt. Let it bubble up (not a complete boil) and then turn off the heat.

  3. Whisk together your egg yolks and granular swerve in a medium bowl. Slowly whisk in your hot heavy cream mixture. Make sure you do this slowly and whisk constantly or your eggs will scramble!!

  4. Divide the mixture between the ramekins evenly and set in a deep baking dish. Pour boiling water into the baking dish until it has reached the half way mark on the outside of the ramekins.

  5. Bake for 40 minutes. Let cool until the crème brûlée is warm (not hot) and you can handle the ramekins with your hands.

  6. Coat the top of the crème brûlées with about 1 tsp of swerve. Use a blow torch to create a caramelized shell.

  7. Serve and enjoy! You can store leftovers in the fridge for up to 5 days
