These Dijon & Goat Cheese Roasted Potatoes are my husband’s favorite potatoes that I make! These roasted potatoes are baked to perfection and topped with a homemade Dijon dressing and goat cheese. The dressing almost makes it like a potato salad! These are so good, you just have to try them! These potatoes are gluten free and vegetarian friendly. Ingredients
For the Potatoes:
- Olive Oil – 2 tablespoons of extra virgin olive oil.
- Potatoes – 2 pounds of Yukon gold potatoes, cut into cubes.

- Olive Oil – 1 tablespoon of extra virgin olive oil.
- Garlic – 1 teaspoon of garlic, minced.
- Dijon Mustard – 2 teaspoons of Dijon mustard.
- Lemon Juice – 1 tablespoon of fresh lemon juice.
- Apple Cider Vinegar – 1 tablespoon.

- Chives – Chopped chives, about 1 1/2 teaspoons.
- Goat Cheese – 2 tablespoons of crumbled goat cheese.
How To Make Them
- Preheat your oven to 400°F. Line a large baking sheet with foil, and set aside.
- Place the potatoes, olive oil, and Dan-O’s Seasoning on your baking sheet and toss to coat. Spread the potatoes out on your baking sheet and roast for approximately 25 minutes. I also broiled mine for 5 to get them a little crispy on the edges.
- While potatoes are roasting, whisk together the dressing ingredients. Set aside.
- Brush the dressing over the potatoes straight out the oven & serve.

How To Store Leftovers
You can store your leftovers in an airtight container in the refrigerator for up to 4 days. When you are ready to enjoy them again, just pop them in the microwave for 30 seconds or so! You can also heat them up in the oven to keep them more crispy.
