This Lasagna Soup is a fun, easy way to enjoy lasagna! It’s super cozy and perfect for cooler weather! It is gluten free, high protein, and grain free too so it can meet so many different dietary needs. It is so incredibly nourishing, cozy, and full of clean, wholesome ingredients. Ingredients

  • 1 tbsp olive oil
  • 2 pounds lean ground turkey
  • 1/2 yellow onion, diced
  • 3 tsp minced garlic, or to taste

  • 14.5 oz. diced tomatoes
  • 14.5 oz. crushed tomatoes
  • 4 oz. tomato paste
  • 2 tsp basil
  • 1 tsp oregano
  • 1 tsp rosemary
  • 1 tsp thyme
  • Salt & pepper to taste
  • 9 oz. gluten free lasagna noodles – I used @jovialfoods organic brown rice noodles
  • 1 1/4 cups mozzarella cheese, freshly shredded
  • 1/2 cup Parmesan cheese, freshly grated
  • 2 oz. ricotta cheese, for topping plus more to taste.

How To Make It

  1. Heat one tablespoon olive oil in a Dutch oven over medium-high heat. Once hot, add the ground turkey. Season with salt & pepper to taste and cook until browned.
  2. Add onion & garlic and sauté until it begins to soften, about 3 minutes.
  3. Add in chicken broth, diced tomatoes, crushed tomatoes, and tomato paste, and spices. Bring to a boil.
  4. Break up the lasagna noodles and add them to your Dutch oven. Cook the noodles until they are fully cooked.
  5. Top the soup off with the shredded cheese & ricotta to taste.

How To Store Leftovers

You can store your leftovers in an airtight container in the refrigerator for up to 5 days. When you are ready to enjoy them again, just pop them in the microwave for a minute or so!
