My Healthy, No Bake Brownie Bites bring back so much nostalgia. I used to LOVE those tiny, powdered-sugar-coated chocolatey brownie bites from the bakery section of the grocery store. But man are those TERRIBLE for you. I could never resist them! If you know, you know lol. What if I told you that you could still enjoy those chocolatey indulgences while eating wholesome, nutritious ingredients? My No Bake Brownie Bites are just as good and are gluten, dairy, and refined sugar free. Plus you don’t have to turn on your oven!

Refined Sugar-Free: One of the most amazing things about these brownie bites is that they’re completely free from refined sugar. Instead, I use coconut sugar & maple syrup to provide a touch of natural sweetness without causing blood sugar spikes.

Gluten-Free: If you’re sensitive to gluten or simply want to avoid it, these brownie bites are a great option. I use a combination of cashew butter and protein powder to give them that rich, fudgy texture—no flour required!

Ingredients

  • 3/4 cup cashew butter (organic; if you are nut free use granola butter. Almond butter also works.)
  • 140g dates (large, organic, pitted, roughly 9)
  • 2 tbsp maple syrup (organic)
  • 1/4 cup cacao powder (organic, I used the brand Better Body Foods)
  • 1 scoop chocolate protein powder (33 grams is one scoop. I used the organic chocolate protein powder by Truvani. Use the code KATIE10 for a discount on their website!)
  • 1/8 cup coconut sugar (organic)
  • 1/8 tsp salt
  • 1/2 tsp vanilla extract (organic)
  • 1/4 cup chocolate chips (dark, organic – I like Hu)

How To Make Them

  1. Like a standard sized loaf pan with parchment paper and set aside.
  2. In a large food processor, simply add all of the ingredients except for the chocolate chips. Pulse until you have a thick dough and all of the ingredients are fully incorporated.
  3. Fold in the chocolate chips with a rubber spatula.
  4. Press the brownie batter into your parchment lined loaf pan. Freeze for 20 to 30 minutes to set.
  5. Remove from the freezer and cut into bite-size pieces. You can cut them into 20-30 bites, depending on how big you want them.
  6. Dust with some confectioners sugar substitute for garnish if you would like. I used monk fruit. Enjoy!

You can store leftover brownie bites in the fridge or freezer for ultimate freshness. I like to freeze them personally and just take them out as I please! If you store them in the freezer, just let them sit out for 5 minutes to soften. They soften pretty quick! You can keep them in the freezer for up to 6 months or in the fridge for about a week or so.
