With these Vanilla Bean Sea Salt Date Caramels, you can satisfy your sweet tooth while nourishing your body with wholesome ingredients. Whether you enjoy them as a midday pick-me-up or a guilt-free dessert, these caramels are sure to become a favorite in your household. So go ahead, treat yourself—you deserve it!
Ingredients
For the Filling:
- 200g organic pitted medjool dates (about 15)
- Hot water to soak your dates in
- 2 tbsp almond butter
- 1/2 tsp vanilla extract
- 1/4 tsp fine sea salt
For the Coating:
- Melted chocolate chips – I like the brand Hu. The best and cleanest chocolate out there in my opinion. You will need 100 grams or so. Melt with a little bit of coconut oil if needed.
How To Make Them
- Soak the dates in a bowl of hot water for ten minutes. This will soften them up & easier to blend in the food processor. Drain the dates & pat dry.
- In a food processor, combine the dates, almond butter, vanilla extract, and salt. Pulse until fully incorporated.
- Spread the filling into a small rectangular or square dish, such as a loaf pan.
- Freeze for 3-4 hours to get really firm and solid. This is very important or they will be too sticky to work with.
- Cut the filling into 15 squares. Melt chocolate and dip each square in the chocolate. Top with sea salt if desired. Chill in fridge until chocolate is firm & enjoy!
How To Store Leftovers
You can store leftovers covered in an air tight container in the fridge for up to 2 weeks. They are best served cool. They really won’t go bad for a very long time, but they don’t last long in my fridge cause they are so good hehe.
