Healthy Cowboy Caviar Dip

This Healthy Cowboy Caviar is such a simple recipe that everyone raves about! It is such a fresh and simple salsa that can be tossed together in just 5 minutes. Serve this in some tacos, a burrito bowl, or as a dip with your favorite chips! This recipe is so simple yet so delicious.

Depending on where you’re from, this simple dip is known as cowboy caviar or Texas caviar, and it’s simply a popular salsa made with a bean, corn, & tomato base. The recipe has evolved over the years, and you can find a number of variations online. Some call for an Italian salad dressing, others just some lime juice & seasonings (like mine). No matter how you tweak it, it’s always delicious with your favorite tortilla chips or in a taco/burrito. This is a staple recipe in my household! I can’t take all the credit for this recipe though, my grandma is the one who showed me how to make it!

Ingredients

  • Black Beans – 15 ounces of black beans, rinsed & drained.
  • Pinto Beans – 15.5 ounces of pinto beans, rinsed & drained.
  • Corn – 15.25 ounces of whole kernel corn, rinsed & drained.
  • Onion– 1/2 of a small yellow onion, diced finely.
  • Avocados – 2 large haas avocados, diced.
  • Tomatoes – 3 Roma tomatoes, diced.
  • Lime Juice – Juice of 3 limes, or to taste. This is roughly 1/4 cup.
  • Cilantro – 1 large handful of cilantro, diced finely.
  • Sea Salt & Pepper – 1 teaspoon of each, or to taste.

Feel free to use your favorite beans & veggies and make it your own!

How To Make It

  1. Combine all ingredients well in a large bowl, gently so you do not smash the avocados.
  2. Enjoy immediately, or for best flavor, let sit in the fridge for an hour for lime juice and flavors to soak in to each other! This is great in tacos, burrito bowls, or just by it’s own with some chips!

Optional Ad-Ins

  • Jalapenos – Try adding 1 or two jalapenos with as many seeds as you would like if you want to spice it up a bit!
  • Garlic/Garlic Powder – For even more flavor!
  • Bell Peppers – Colors of choice
  • Red Wine Vinegar – Sometimes, I add a little bit of red wine vinegar to my salsa in addition to the lime juice! This recipe honestly changes a little bit each time I make it because I am typically using whatever I have on hand and improvising where needed! That’s what cooking is all about though right?

My Trick To The Best Salsa

In my opinion, the trick to the best cowboy caviar is to dice the veggies that need dicing (the tomatoes, onion, avocado, etc.) small. No one wants to take a bite into a huge piece of tomato or onion! An easy way to do this is with a vegetable chopper such as this one!

How To Store Leftovers

You can store your leftovers in an airtight container in the refrigerator for up to 6 days.
