Almond Flour Strawberry Pie Bars 🍓🍓🍓

👩🏻‍🍳INGREDIENTS:
Strawberry Filling:
3 cups diced fresh strawberries 🍓 
1/4 cup monk fruit or coconut sugar
1 tbsp fresh lemon juice 🍋 
Zest of 1 large lemon
2 tbsp organic tapioca flour

Crust and Topping:
3 cups organic almond flour
2 tbsp organic tapioca flour
1/4 tsp baking soda
1/4 tsp sea salt 🧂 
1/8 cup coconut oil or grass fed butter (softened)
1/4 cup Greek yogurt
1/4 cup organic maple syrup

👩🏻‍🍳INSTRUCTIONS:

Makes 9-12 bars.

Bring filling ingredients to a low boil and cook 5-10 minutes. Stir in tapioca starch. Remove from heat. Preheat your oven to 350°F. Line a square baking dish w/ parchment paper. Combine crust ingredients until a thick dough forms. Press 1/2 the dough in your dish. Bake 10 min. Spread strawberry filling on top. Sprinkle the remaining dough on the top of the strawberry layer. Bake 20-25 min. Allow bars to cool before slicing.

Firecracker Ground Chicken Stir Fry 🔥🌶️

👩🏻‍🍳INGREDIENTS:
stir fry:
2 tbsp olive oil 🫒 
2 lbs ground chicken
1 zucchini (diced)
1 red bell pepper (diced)
1 bunch green onions (diced)
2 tsp ginger (minced) 🫚 
2 tsp garlic (minced) 🧄 

sauce:
1 tbsp sesame oil
1 tbsp rice vinegar
1/3 cup coconut aminos (organic)
2 tbsp honey 🍯 
2 tbsp chili paste 🌶️ 

1 tbsp cornstarch + 1 tbsp water to thicken (slurry)

Place half the oil in a large deep skillet or wok. Add the ground chicken. Sear on pan for a couple minutes before breaking up to create a nice sear. Season with salt & pepper to taste. Continue to break up and cook until fully cooked and then set aside on a plate. Add the remaining oil, along with the green onions, bell pepper & zucchini. Sauté for a minute and then add the garlic & ginger. Cook for 4-5 minutes or so, or until the veggies are cooked down. Add the chicken back in. Reduce the heat to low and then add the sauce. Simmer for 5 minutes, or until the sauce thickens. Make the sauce even thicker by whisking in a slurry into the sauce. Serve over rice and enjoy!

🍫My no bake brownie bites are made with butter for you ingredients. They’re gluten, dairy and refined sugar-free 🤗 

No Bake Brownie Bites 😍

👩🏻‍🍳INGREDIENTS:
1 scoop chocolate protein powder (33g; I use Truvani - Code KATIE10 for 10% off)
2 tbsp maple syrup (organic)
1/8 cup coconut sugar (organic)
1/4 cup cacao powder (organic, unsweetened)
140g dates (organic, pitted)
3/4 cup cashew butter (creamy, organic)
1/2 tsp vanilla extract 
Pinch salt
1/4 cup chocolate chips (dark, organic; I use @hu_kitchen)

👩🏻‍🍳INSTRUCTIONS:

In a food processor, simply add all of the ingredients except for the chocolate chips. Pulse until you have a thick dough. Fold in the chocolate chips. Press the brownie batter into a parchment lined loaf pan. Freeze for 20 to 30 minutes and then remove from the freezer and cut into bite-size pieces. Enjoy! Storing instructions and full macros on my blog.

If you don’t want to use protein powder, you can use additional cacao powder. You can also use any nut butter of choice. I feel that cashew and almond work best because they have more of a neutral flavor

👩🏻‍🍳INGREDIENTS:
3 eggs (large, organic) 🥚 
1/2 cup maple syrup (organic)
1 cup Greek yogurt (plain, organic, nonfat)
1 tsp vanilla extract (organic)
4 1/2 cups almond flour (organic)
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt 🧂 
1 orange (zest of 1 orange) 🍊

Copycat Savannah Smiles 🍋 

👩🏻‍🍳INGREDIENTS:
2 cups almond flour (organic)
1/4 cup powdered monk fruit
1/4 tsp salt
6 tbsp butter (grass fed, softened)
1/2 tsp vanilla extract
Zest of 2 lemons
Juice of 1/2 lemon 🍋 
1/4 tsp lemon extract (optional if you want them super lemony)

👩🏻‍🍳INSTRUCTIONS:

Whisk together the dry ingredients and then add in the wet. Mix until you have a thick dough and all the ingredients are fully incorporated. Form into little half moon shapes (yes I know mine ended up looking like cashews hahah). Line on a large baking sheet and bake for 12 minutes at 325°F. Cool completely and then dust in additional confectioner’s style monk fruit.

Makes about 30 cookies depending on the size.

For the French toast:
2 challah rolls cut in half or 4 large slices of bread 🍞 
1 egg 🥚 
1/3 cup unsweetened almond milk 🥛 
30g vanilla protein powder
1 tsp vanilla extract 
1/4 tsp cinnamon

For the filling:
1/4 cup plain, nonfat Greek yogurt 
2 tbsp organic cream cheese, softened
1 tsp fresh lemon juice 🍋 
2/3 cup finely chopped strawberries (3-4 large)

👩🏻‍🍳INSTRUCTIONS:

In a small blender, blend the egg, almond milk, protein powder, vanilla extract, and cinnamon. Pour into a shallow dish and set aside. In a small bowl, combine all the filling ingredients until fully incorporated. Slice your challah rolls in half and divide the filling inside the two rolls. 

Soak the stuffed challah rolls in the egg mixture. Really let it soak for a bit for the rolls to soak up all the mixture!! Cook on a griddle or pan for about 3-4 minutes each side (I sear the edges of the rolls as well for a few seconds!). Serve with you favorite maple syrup 🤗

Greek Yogurt Sourdough Cheddar Biscuits 🧀

👩🏻‍🍳INGREDIENTS:
Biscuit dough:
2 cups all purpose flour
1 tsp baking soda
1 tsp baking powder
1 tsp salt 🧂 
1 tsp garlic powder
1/2 cup Greek yogurt (plain, nonfat)
3/4 cup almond milk (plain, unsweetened)
1/2 cup sourdough discard
1 cup sharp freshly grated cheddar cheese 🧀 

Butter topping (optional):
2 tbsp butter melted mixed with dried parsley, to taste

👩🏻‍🍳INSTRUCTIONS:

Preheat your oven to 400°F. Line a large baking sheet with parchment paper and set aside. In a large mixing bowl, whisk together the flour, baking soda, baking powder, and salt. Next, add in the Greek yogurt, almond milk, and sourdough discard. Mix until you have a sticky dough. If it seems too sticky, add a few tablespoons of flour but it should be slightly sticky. Add the cheddar cheese and fold it into the dough. Scoop out 12 biscuits onto your baking sheet (they will look like blobs. It’s a different texture than a traditional biscuit). Bake for 20 minutes.
