This almond butter fudge is a fast & easy no bake dessert that is naturally sweetened, low calorie, gluten free, & dairy free! They only require 4 simple ingredients for the base and you probably already have all the ingredients at home. This almond butter fudge feel like a rich dessert, but they are actually healthy! They are packed with fiber, antioxidants, and flavonoids. You can customize them in so many different ways with your favorite toppings and even switch up the nut butter you use in the base. What You Will Need
- Almond Butter – 1 cup of smooth almond butter. My favorite is by Prozis. Use the code code KATIE10 for 10% off!
- Coconut Oil – 1/3 cup melted coconut oil. This is what gives these that true fudge consistency.
- Maple Syrup – 1/3 cup maple syrup. I use the brand Lakanto because it is sweetened with monk fruit and lower in calories. If you use pure maple syrup, adjust the macros below accordingly.
- Protein Powder – Optional, but I highly recommend it! Protein makes you feel fuller longer & is great for lean muscle mass. I use 45 grams of the vegan protein by Prozis. Use the code code KATIE10 for 10% off.
- Toppings of Choice – Make these your own! I will put some topping ideas below.
How To Make Them
- Line a small 8×8 square dish with parchment paper (or use a silicone one like me). Set aside.
- In a small mixing bowl, combine the almond butter and protein powder. mix until smooth and creamy.
- Add in the coconut oil & maple syrup. Mix until fully incorporated.
- Press the mixture down into the bottom of your dish. Top with your favorite toppings.
- Place in the freezer until completely hardened. Slice into 16 slices and enjoy!
Topping Ideas
- Melted chocolate – I like Hu or Lily’s as healthy options.
- Nuts – almond, peanuts, pistachios, pecans, etc.
- Seeds
- Caramel – Try my date caramel!
- Sea salt
- Pretzels
How to Store Leftovers
Store your leftover fudge in the freezer. It will be too soft if you store it in the fridge, Let the fudge thaw for 5-10 minutes after removing from the freezer and you will be good to go!
