What You Will Need
- 1/2 cup plain nonfat Greek yogurt
- 1/4 cup monk fruit or sweetener of choice
- 2 eggs
- 1/2 cup unsweetened almond milk
- 1 tbsp. vanilla extract
- 1 3/4 cups of oat flour
- 1 tsp baking soda
- 1/2 tsp cinnamon
- Dash nutmeg
- 1/2 tsp salt
- 1 1/2 cups of grated zucchini (probably about two medium zucchinis. Make sure to squeeze the grated zucchini so it’s as dry as possible!)
- 1 cup of add-ins like nuts, raisins, or chocolate chips (optional)

How To Make It
- Preheat your oven to 350°F. Grease a bread pan or line a bread pan with parchment paper.
- In a large bowl, whisk together all the dry ingredients. Add in the wet and stir until just combined.
- Fold in the grated zucchini & any add ins you would like (optional).
- Pour batter into your loaf pan. Bake for 40-50 minutes, or until a toothpick comes out clean.
- Top you bread off with the Oat Haus Granola Butter and thank me later.
How To Store
Store your leftovers covered in your bread pan in the fridge for ultimate and longest freshness (about a week). You can also store it in a cool, dry place for up to 4 days.
