Healthier Spinach & Artichoke Dip

This Healthier Spinach & Artichoke Dip tastes better than the original and is packed with protein! It is also low carb, vegetarian friendly, and requires very minimal and simple ingredients. The macros below are assuming 4 servings, but this can feed way more than that. I just divided it into 4 to show how low calorie and high volume this dip is!

I love serving this dip with the new Primal Bakery Protein Crackers. They are vegan, made with plant protein, keto certified, and have absolutely zero artificial preservatives, flavors, or colors. You can find them at Sprouts, GNC (online) or their website directly! This is a great dish to bring to a pot luck or any sort of gathering as an appetizer. Ingredients

  • Greek Yogurt – 1 cup of plain, nonfat Greek yogurt.
  • Cottage Cheese – 1 cup of 1% small curd cottage cheese.
  • Spinach – 8 ounces of frozen spinach, thawed & drained.
  • Artichokes – 6 ounces of artichokes in water, drained & diced.
  • Mozzarella – 1/2 cup of shredded mozzarella cheese.
  • Parmesan Cheese – 2 tablespoons of grated parmesan cheese.
  • Onion Powder – 1/2 teaspoon.
  • Garlic Powder – 1/2 teaspoon.
  • Pepper – To taste.

How To Make It

  1. Preheat oven to 400°F. Prepare a glass baking dish with nonstick spray.
  2. In a small blender, blend together the cottage cheese and Greek yogurt until smooth & creamy.
  3. Place the spinach in a dishcloth and ring out the excess water very well.
  4. In a medium mixing bowl, combine the blended yogurt & cottage cheese, spinach, artichokes, seasonings, Parmesan, and half the mozzarella.
  5. Pour your dip into a small glass baking dish. Sprinkle the reserved mozzarella on top.
  6. Bake for 25 minutes then set the broiler to high and broil for 2-3 additional minutes to get that golden top!
  7. Serve immediately with veggies or your favorite crackers, such as the Primal Bakery protein crackers for a healthy, high protein snack!

How To Store Leftovers

Store this dip in an air tight container or covered in the original baking dish in the fridge for 4 days (can go up to 7 though). Reheat at 350F for 15-20 minutes in the oven for best results, but but you can microwave it too if you are short on time!
