Low Carb Honey Mustard Chicken

This Low Carb Creamy Honey Mustard Chicken is juicy, tender, and marinated in a creamy honey Dijon mustard sauce with a little kick. It only takes 20 minutes to make and is another one of my one-pan easy weeknight meals. This recipe makes 5 servings so it is a perfect family dinner! There are only 4.8 grams of carbs per serving and this dish is also very low in calories and high in protein!

Ingredients

  • Chicken Breasts – 20 ounces (1.25 lbs.) of boneless, skinless chicken breasts. I used 5 4-ounce chicken breasts.
  • Olive Oil – Just a drizzle to keep the chicken from sticking
  • Butter – 1 tablespoon of salted butter.
  • Garlic – I used 2 teaspoons of minced garlic but measure with your heart!
  • Chicken Broth – 1 cup of low sodium chicken broth so make your creamy honey Dijon sauce.
  • Dijon Mustard – You can really use your preferred type of mustard in this but I personally love Dijon mixed with some stone ground mustard in this recipe! You will need 2 teaspoons of it.
  • Stone Ground Mustard – You will also need two teaspoons of this.
  • Honey – 1 tablespoon of your favorite type of honey. If you want to stay away from the sugar in honey, you can use a sugar free syrup or other sweetener of choice.
  • Cream Cheese – I used 4 ounces of low fat cream cheese, but you can also use full fat if that is what you prefer!
  • Garlic Powder – 1 teaspoon of garlic powder, or to taste.

  • Salt & Pepper – To taste

How To Make It

  1. Season both sides of your chicken breasts with Dan-O’s spicy seasoning, garlic powder, and salt & pepper to taste.
  2. Heat up a large saucepan over medium/high heat with a drizzle of olive oil. Cook for about 10 minutes, flipping half way through or until fully cooked. Remove the chicken and set aside.
  3. Add the butter and garlic to the pan. Cook for about a minute then add the chicken broth. Bring to a boil.
  4. Add the cream cheese and lower the heat to medium. Stir until the cream cheese is fully melted.
  5. Add the honey, Dijon & stone ground mustard and stir until fully incorporated. Add the chicken back to the saucepan and let simmer for 5 minutes. Top with fresh parsley if desired.
  6. Serve & enjoy!!

How To Choose Good Honey

People associate honey as being unhealthy but if you get the right kind it is actually very good and nutritious for you!

So I actually know a lot about honey because I went to an olive oil & honey farm in Crete, Greece a few months ago! It was SO beneficial let me tell you and you can really taste the difference. I buy all of my olive oil and honey from Crete now and I will never go back!

  • Get Raw Honey – Raw honey is honey that is free from any sort of tampering, processing, or heating. It is honey just how the bees make it. If honey goes through any sort of treatment it loses nutrients.
  • Look for the word “unfiltered” – If honey goes through the pasteurization process, it often gets filtered. This eliminates all of those natural nutrients in honey!!
  • Packaging matters – Try to get honey that is in a glass jar. It will last way longer and not be exposed to any harsh chemicals.
  • Get Locally Sourced Honey – I buy my honey from Crete because it is locally sourced. Local bees make local honey so the pollen they collect and bring back to their hives are all sourced from local plants. Consuming honey that has these pollens can actually help combat stubborn allergies!

How To Store Leftovers

You can store your leftover chicken in an air tight container in the fridge for up to 4 days. When you are ready to enjoy your leftovers, just pop them in the microwave for a minute or so.
