Reasons to Love These Pizza Bombs

  • Quick & Easy: This super and easy to make and require very simple ingredients. They are fool-proof I promise!
  • Low Carb, High Protein: I know this is pretty obvious haha, but it’s important! There are only 2 grams of net carbs and 9 grams of protein per pizza bomb.
  • Delicious: These are SO good. There are not enough words to express how dang good these bagel bites are. You will be making them on repeat for your friends and family!

Ingredients

  • Mozzarella – 1 1/2 cups of shredded mozzarella cheese.
  • Cream Cheese – 1 ounce (2 tablespoons) of organic cream cheese, softened.
  • Egg – 1 large egg.
  • Almond Flour – 1 cup of almond flour. I used the Prozis Organic Almond Flour. You can use the code “KATIE10” for 10% off their site!
  • Baking Powder – 1 teaspoon of baking powder.
  • Everything Bagel Seasoning – 1 tablespoon of Dan-O’s Everything Bagel Seasoning – Code COOKINGKATIE for 10% off!
  • Marinara Sauce – 2 teaspoons of organic marinara sauce for the filling, plus more to dip. I used the Primal Kitchen no sugar added marinara sauce.
  • Pepperoni – 6 slices of pepperoni. I used turkey pepperoni to keep it more lean!

How To Make Them

  1. Preheat your oven to 375°F. Line a medium baking sheet with parchment paper or a silicone baking mat.
  2. In a small, microwave safe bowl, melt the mozzarella cheese and cream cheese in the microwave in 2 30-second increments, stirring half way through.
  3. In a medium mixing bowl, combine the melted cheese, almond flour, egg, baking powder, and everything bagel seasoning. I find it easiest to knead the dough with my hands.
  4. Form eight evenly sized flattened circles of dough and line along your baking sheet. Divide the chopped pepperoni & marinara sauce in the center of each pizza bomb. Don’t add too much sauce or it will be hard to “seal” your pizza bombs.
  5. Pinch the edges of the dough closed around the filling to form your pizza bombs.
  6. Spray the tops of the pizza bombs evenly with olive oil using your Flairosol advanced oil sprayer.
  7. Bake for 12 minutes and enjoy! Serve with additional marinara sauce.

**You could most certainly make these smaller to be more like pizza rolls, but it was just easier for me to work with my hands with 8 larger pieces of dough!! Maybe I just have big fingers, who knows.

How To Store Leftovers

You can store your leftovers in an airtight container in the refrigerator for up to 3 days. When you are ready to enjoy them again, just pop them in the microwave for 30 seconds or so.
