Satisfy your ice cream craving with these low calorie Dark Chocolate & Greek Yogurt Covered Raspberries! These raspberries have a salted dark chocolate shell with a frozen yogurt and raspberry center. These are only 88 calories per serving and they are so refreshing! This is a great recipe for when you need to use up those raspberries that are about to go bad! This recipe requires very simple ingredients that you most likely have at home already as well! You can use your favorite fruit of course as well such as strawberries, bananas, blueberries, etc.!

What You Will Need

  • Raspberries – You will need 6 ounces of fresh raspberries.
  • Greek Yogurt – I used 1/2 a cup of plain, non-fat Greek yogurt.
  • Lily’s Dark Chocolate Chips – I used 4 ounces of Lily’s Dark Chocolate Chips. You can use any sugar free dark chocolate chips of your choice, but Lily’s is great because they are naturally sweetened and low carb! You can find them on Amazon here or at your local grocery store.
  • Sea Salt – This is optional but makes the most perfect finishing touch! I put a few pieces on top before the chocolate hardens up on the raspberries.

How To Make It

  1. Dip each raspberry in the Greek yogurt and place on parchment paper. Freeze for about ten minutes, or until the Greek yogurt is hard.
  2. Melt your dark chocolate chips either in the microwave or over the stove (see the tips below on how to melt the chocolate easily).
  3. Dip each raspberry in the melted chocolate and top with sea salt immediately.
  4. Place in the freezer for another 10-15 minutes to harden the chocolate and enjoy!

How To Store

Store your Dark Chocolate & Greek Yogurt Covered Raspberries in an air tight container in your freezer for up to two weeks. When you are ready to enjoy them, take as many out as you would like to enjoy out and let them sit out for 10 minutes before digging in!

The Easiest Way to Melt the Chocolate

You can easily toss the chocolate in the microwave, but I feel like it is so hard to keep the chocolate melted long enough for you to work with it and dip all of your raspberries in it. If you decide to go this route, I would reccommend adding a little but of coconut oil to your chocolate chips to help it be more creamy.

I find it easier to melt my chocolate over the stove by using the double boiler method. To do this, bring a small pot of water to a boil. Place the chocolate chips in a glass bowl that fits nicely on top of the pot. Set the bowl on top of the pot with the boiling water and allow the chocolate to melt. Once it is fully melted, turn the heat down to low and begin dipping your raspberries.

Tips

Here are my tips for making the perfect dark chocolate covered raspberries:

  • Make sure your raspberries are washed and COMPLETELY dried before you start dipping! If they are wet, the Greek yogurt won’t stick and you will have a big mess.
  • Use a plain Greek yogurt if possible. I personally don’t even like flavored yogurts but I think they would taste kind of odd with this combination. I also wouldn’t suggest using yogurt with any sort of chunks in it.
  • Melt your chocolate using my method above.
  • Have a large baking sheet lined with parchment paper ready so that you can place all of your dipped berries on there and easily move them back and forth from the freezer.
