- Oats: Oats are extremely nutritious! They are rich in antioxidants and fiber. They are known to also help lower your cholesterol levels.
- Greek Yogurt: Greek yogurt is a good source of protein, improved gut health, and can help boost your metabolism.
Ingredients
- Oat Flour – 1 3/4 cup of oat flour. I love using the Oats Instant powder by Prozis. It makes your baked goodies so much fluffier than regular oat flour! They make different flavors and have some with protein powder added too. Use the code “KATIE10” for 10% off!
- Bananas – Easy guess right? I used 3 medium bananas, mashed.
- Applesauce – 1/3 cup of unsweetened applesauce. This is an awesome substitute for using butter & oils in baked goodies!
- Greek Yogurt – 1/3 cup of plain, nonfat Greek yogurt.
- Eggs – 2 large eggs.
- Vanilla Extract – 1 teaspoon, for flavor.
- Granular Swerve – 1/4 cup of granulated Swerve, or zero calorie sweetener of choice. If you aren’t familiar with Swerve it is a zero-calorie, low-glycemic sweetener that measures cup-for-cup to sugar. It’s completely safe and natural, with no artificial ingredients, preservatives or flavors!
- Nutmeg – 1/2 teaspoon, for flavor.
- Cinnamon – 1 teaspoon, for flavor.
- Salt – 1/2 teaspoon.
- Baking Soda – 1 teaspoon.
- Brown Swerve – This is optional, but I highly recommend it to sprinkle on top!

How To Make Them
- Preheat oven to 350°F and line a standard sized muffin tin with liners or spray with nonstick spray.
- In a medium bowl, mix together the mashed banana, Greek yogurt, applesauce, vanilla extract, and eggs.
- Add the flour, swerve, salt, baking soda, cinnamon, and nutmeg and mix until just combined. Don’t over mix!
- Pour the batter into your muffin tin (I was able to make 18 muffins so you will have extra batter to make a few more!). Top with a little bit of brown sugar substitute, such as Swerve if desired.
- Bake for 15-20 minutes, or until the tops are browned and a toothpick comes out clean. Store in an air right container in a cool, dry place for up to 5 days.
How To Store Your Leftover Muffins
You can store your leftovers in an air tight container or covered with plastic wrap in the muffin tin for up to 6 days. When you are ready to enjoy a muffin again, just pop it in the microwave for 10 seconds or so!
