This Cottage Cheese Egg Bake is such a quick, easy and delicious nutritious breakfast! It is perfect for a weekend family breakfast or for meal prepping throughout the week! What You Will Need:

  • 1 cup small curd 1% cottage cheese
  • 9 large organic eggs
  • 1 cup chopped organic baby spinach
  • ⅓ cup feta cheese
  • ¼ tsp salt & pepper
  • 1 tsp oregano
  • ¼ tsp garlic powder
  • 1 large red bell pepper, diced
  • ⅓ cup organic white grated cheddar cheese
  • Green onions, or any other veggies you’d like!

How To Make It

  1. Preheat your oven to 400°F. Spray a standard pie dish with olive oil spray & set aside.
  2. In a large mixing bowl, whisk the eggs. And all the remaining ingredients & mix well to combine.
  3. Pour mixture in the prepared dish.
  4. Bake for 45 minutes or until the eggs are set and the center is not jiggly.
Allow to cool for 15 minutes before serving. Enjoy!

How To Store Leftovers

If you end up having any leftovers, you can store them in an air tight container in the freezer for up to 1 month. I like to let mine defrost a few hours before I want to enjoy it again in my fridge for that perfect creamy consistency.
