I used a mini waffle maker by Dash in this recipe, and it made me 4 mini pumpkin waffles. The macros below are for a serving of 2 mini waffles.

Ingredients
- Vanilla Pudding Mix – 2 tablespoons of the Simply Delish Sugar Free Keto Vanilla pudding Mix. Use the discount code KATIE10 for 10% off!
- Baking Powder – 1/4 teaspoon of baking powder.
- Eggs – 2 large eggs, whisked.
- Mozzarella Cheese – 1/2 cup of shredded mozzarella cheese.
- Vanilla Extract – 1/8 teaspoon of vanilla extract.
- Almond Extract – 1/8 teaspoon of almond extract. You could also use more vanilla but almond extract gives these the BEST flavor just sayin!
How To Make Them
- Warm up your waffle maker while you make your batter. I used a Dash mini waffle maker.
- In a small bowl, mix together all of the ingredients until fully incorporated.
- Pour 1/4 of your batter into your waffle maker. Cook until your waffle maker goes off. Repeat for the remaining 3 waffles.
- Serve with sugar free maple syrup and enjoy!
How To Store Leftovers
You can store your leftover chaffles in an airtight container in the refrigerator for up to 4 days. To reheat, place them in the microwave for about 30 seconds or so!
