No Bake Protein Brownie Date Balls

These healthy, No Bake Protein Brownie Date Balls are a quick and easy low calorie, high protein treat! You only need 5 simple ingredients and you can even make these treats in bulk and store them in your freezer! These are just the perfect little after work/school snack! What You Will Need

  • 1/4 cup organic pure pumpkin purée
  • 3/4 cup chopped walnuts (3 oz) – Mine are from Prozis
  • 10 pitted medjoule dates
  • 1/4 cup unsweetened cocoa powder
  • 30g protein powder (either chocolate, vanilla, or unflavored – I use Prozis)
  • 1/4 tsp fine sea salt

How To Make Them

  1. Combine all ingredients (except reserve half the walnuts for later) in a food processor until a dough forms.
  2. Freeze dough for 10 minutes to firm up.
  3. Make 12 brownie balls and then roll each one in the reserved walnuts.

How To Store Them

Store your leftovers in an air tight container in the fridge. You can also freeze them for up to 3 months if you make a large batch of them as well.
