Why You Should Be Eating Sourdough

The bacteria-yeast composition will start to breakdown the starches found in the grains before it even reaches your stomach!! Most of the work is done before you consume, making it much easier on your gut.

Ingredients
- 113g active organic sourdough starter, at its peak (about 1/2 cup)
- 600g organic bread or all-purpose flour (about 4 cups)
- 350g warm, filtered water (about 1 1/2 cups)
- 2 tsp fine sea salt
- 2 tbsp organic extra virgin olive oil
- Pizza toppings of choice
How To Make It
- The morning of pizza night, add the ingredients to a stand mixer. Mix the dough on medium speed with a dough hook until smooth & fully incorporated (about 5-7 min).
- Cover with a damp towel or plastic wrap. Rest at room temperature for 8 hours. If you choose to make pizza the same day, continue to next steps. If not, store in the fridge or freezer until ready to use. See notes below on this.
- Preheat oven to 475. Divide the dough into 4 equal sections.
- Roll out each section on a lightly floured surface. Place each pizza on either a pizza pan, pizza stone, cast iron, or whatever you decide to use.
- Add sauce & your favorite toppings. Bake for 13 minutes and then broil for a few additional minutes for a nice golden crust (3-4 minutes). Enjoy!
How To Store Leftovers
You can store your leftover cooked pizzas in an air tight container in the fridge for up to 4 days. They are best when reheated in the oven to stay crispy. I put them in the oven at 350 for 10 ish minutes to do this,
Can I Prepare the Dough & Make the Pizzas Later?
Absolutely! That is one reason why I love this recipe so much. After the dough has risen, you can store it covered tightly in plastic wrap in the fridge for up to 3 days. If you plan on using it even later down the road, you can freeze it for up to 3 months after the dough has risen all the way.
