These Lemon Rosemary Chicken Fritters are a great low carb, high protein main course meal or are also an excellent appetizer! These fritters are infused with fresh tangy lemon & fresh rosemary. Your mouth will be watering when you take your first bite into these. They are a kid & adult pleasing dish too! These are extremely easy & quick to make, and full of easy, healthy ingredients. Serve these with your favorite dipping sauce and a fresh, crunchy salad. Full macros are below and I hope you love these fritters as much as I do! Why Is Consuming Protein Important?

Ingredients

  • 2 lbs. ground chicken, organic
  • 1/4 cup almond flour, fine & organic
  • 1 egg, large
  • 2 heaping tbsp. rosemary, fresh & chopped
  • 1 + 1/4 tsp salt
  • 1/2 tsp pepper
  • 1 tsp cayenne pepper (or more if you like spice like me!)
  • 4 tsp. garlic, minced
  • Zest of 2 lemons
  • 4 tbsp. chives, fresh & chopped
  • Juice of 1 large lemon

How To Make Them

  1. Combine all fritter ingredients into a large mixing bowl.
  2. Divide into 18 chicken patties/fritters. Preheat a large pan with some olive or avocado oil over medium/high heat.
  3. Cook the fritters for 4 minutes or so on each side and serve with your favorite sauce & sides!

How To Store Leftovers

You can store your leftovers in an airtight container in the refrigerator for up to 4 days. Top reheat, just pop the fritters in the microwave for a minute or so! You can also air fry or bake them at 350 for about 5-10 minutes to keep the edges more crispy.
