Low Carb Cheesy Chicken Fritters

My Cheesy Chicken Fritters are another one of my favorite dishes to make. They make a great appetizer or even a main course meal. They are low calorie, gluten free, and packed with protein! Kids LOVE these let me tell you. These savory bites combine juicy chicken with gooey cheese and are bound together with almond flour instead of breadcrumbs, making them a perfect low-carb treat with less than 1 gram of net carbs per serving.

Why Almond Flour?

Almond flour is a fantastic alternative to traditional breadcrumbs, especially if you’re following a low-carb or ketogenic diet. Not only does it cut down on the carbs, but it also adds a subtle nutty flavor. Unlike breadcrumbs, almond flour is packed with protein, healthy fats, and vitamins, making it a nutritious option for binding your fritters together.

  • Quick & Easy: These are super and easy to make and require very simple ingredients and equipment. They are perfect for serving to crowds!
  • Versatile: My Cheesy Chicken Fritters are really such a versatile dish and I have never met anybody who doesn’t like them! You can customize the meat, seasonings and spice level to however you would like!
  • Macros: I mean come on, let’s state the obvious. These are 92 calories each with less than 1 gram of carbs and 9 grams of protein! I love me some low carb, high protein dishes!

Nutritional Benefits

  • Chicken: Chicken is a great source of protein (helps with building muscle and toning up!). It is also rich in calcium & phosphorous, which aid in bone health! There are lots of other great vitamins & minerals and chicken is relatively low in calories.
  • Almond Flour: Almond flour is my go-to flour when I am making a lot carb dish. Almonds are high in fat, but it is unsaturated fat. This type of fat is good and does not raise those “bad” cholesterol levels. It is rich in Vitamin E, which is an antioxidant as well.

Ingredients

For the Chicken

  • Chicken– Easy guess right? You will 2 pounds of organic ground chicken. I get mine from Butcher Box. Sign up here to get free protein in every box!
  • Egg – 1 large egg. You can use egg whites if you prefer or an egg substitute if you can not have eggs as well.
  • Almond Flour – 1/3 cup of almond flour.  I used the Prozis Organic Almond Flour. You can use the code “KATIE10” for 10% off their site as well!
  • Shredded Cheese – 1 cup of your favorite cheese. I used fresh mozzarella.
  • Basil – 2 tablespoons of fresh basil. Fresh is best, but you can use try too if that is all you have! Adjust measurement accordingly if using dry.
  • Italian Seasoning – 2 teaspoons.
  • Garlic Salt – 1 teaspoon, or to taste.
  • Pepper – 1 teaspoon, or to taste.
  • Red Pepper Flakes – To taste, I like a good amount of spice in mine!!
  • Onion Powder – 1/2 teaspoon, or to taste.
  • Olive Oil – 1 tablespoon
  • Avocado Oil – 1 tablespoon, to cook in.

How To Make Them

  1. Combine the ground chicken, egg, almond flour, cheese, basil, seasonings, and olive oil in a large mixing bowl until fully incorporated.
  2. Create 24 evenly sized chicken fritter patties, about 2 inches wide.
  3. In a very large nonstick skillet or wok, (I used a Hexclad 12″ Hybrid Stainless Steel Skillet), heat up the avocado oil.
  4. Add the chicken fritters to the skillet and cook for 5 minutes on each side (you will need to do a few batches so that you do not overcrowd the pan). Be sure to not flip them back and forth continuously so you get that perfect golden outer crust.
  5. Serve with your favorite sauce and enjoy!

Tips for Success

  • Ensure Even Cooking: Make sure your fritters are evenly sized so they cook at the same rate.
  • Monitor Heat: Keep an eye on the heat level to avoid burning the fritters. Medium heat works best to ensure they cook through without burning the outside, but still leaving them with a nice sear.

How To Serve

Here are some of my favorite toppings and sides to go with this low carb chicken piccata::

  • My Homemade Copycat Chick-Fil-A Sauce – These go SO well with my homemade Copycat Chick-Fil-A Sauce! I also love having these with some spicy mustard or ranch. Primal kitchen makes great healthy ones!
  • Veggies/Dip – Some sautéed veggies or a healthy dip such as my Avocado Feta Veggie Dip would be a great side!
  • Side Salad – I love a classic Italian Salad with this meal!

Can I Make These in the Air Fryer?

Yes!! These turn out just as great in the air fryer. Spray the air fryer basket well with some olive oil spray and then spray a little bit over the top of the fritters to help them get that golden brown crust. I suggest cooking them at 400ºF for 10 minutes, flipping them halfway through cooking. Be sure to not over crowd your basket!

How To Store Leftovers

You can store your leftovers in an airtight container in the refrigerator for up to 3 days. When you are ready to enjoy them again, just pop them in the microwave for a 45 seconds or so.
