Ingredients
For the Salad:
- 6 cups cubed watermelon
- 1 large cucumber, cut into quarters
- 1/2 cup thinly sliced red onion
- 8 oz. crumbled feta cheese
Dressing:
- Juice of 1 lime
- 1 tbsp. honey
- 2 tbsp. red wine vinegar
- 2 tbsp. olive oil
- Sea salt, to taste
- Fresh mint, to taste
Optional for the Spicy Version:
- Sliced jalapeños
- Tajin seasoning
How To Make It
- Combine all ingredients in a large bowl (add the feta last so that doesn’t get too mushed up).
- Divide into 8 servings & enjoy!
How To Store Leftovers
You can store your leftovers in an airtight container in the refrigerator for up to 4 days.
